BEFORE YOU BUY A THERMOMIX, you should carefully consider the following: What are you going to do with the time you save when you cook with a Thermomix? Do you really want to have fun while cooking or does your food taste better when cooking is a chore? Do you really want to have less cooking utensils to clean after cooking or is cleaning up the best part of cooking? Do you mind having restaurant-worthy meals made easily at home (instead of going to a restaurant)? What are you going to do with the money you save? Would it be ok for you to consume less preservatives and other unhealthy stuff from prepared store-bought food? Do you really want to be able to easily find new recipes whenever you feel like it? - There are many more points to consider, but this should do for now. 😉

Have you ever looked at a recipe and thought: "I wish, I could eat that, but it's not gluten-free, dairy-free, whatever-free"?
My family has a variety of food issues and luckily I like to "tinker" with recipes and change/adapt them to our needs. So, when I found out that my friend Pauline's apple cake recipe is featured on cookidoo now, of course I got to work on it right away!

The regular flour was switched out for the same amount of gluten-free flour. I used the flour-recipe from cookidoo, used tapioca flour instead of potato starch.
Instead of eggs, I used flaxseed egg-replacement (same as linseed).
Per egg, soak 1 tbsp ground flaxseed in 2 tbsp of water for 15 min. For this recipe, you'll need to double that, because it calls for 2 eggs.
Instead of sugar, I used 5 oz of maple syrup and left out the brown sugar completely.
For oil, I used coconut oil, because the linseed oil had run out.
I left out the cinnamon and the nutmeg and just used the ginger.

The cake turned out tasty and moist and the person with the most food allergies was elated and happy. Win-win.

It can be a big disappointment for people with food allergies to give up certain food, that they used to love. This is especially hard on children. One day I asked my lactose intolerant grandson, if he was missing yogurt. The answer was a wistful “yes”. So I set out to find dairy free yogurt starter and found it on amazon. (See picture) When it finally arrived, my first batch was cashew yogurt, using the cookidoo recipe. His reaction after the first bite:” This tastes confusing!” Hahaha. Here is why: it doesn’t really feel or taste like yogurt. But it tastes really good, with a bit of a nutty taste and has a smooth, thick, creamy consistency and in the end, everyone loved it.
My next project will be coconut yogurt, so stay posted.

We love celebrating the weekend with a special meal. It’s so nice to be able to create a restaurant grade dinner at home! Sous vide chicken ballotine with red capsicum (red pepper) sauce. This is something I would never attempt without my Thermomix, because it would be too much trouble.

Yeah, it’s blueberry time!!! Hubby bought a 5 lb flat from a farm on his way home from work. What a nice surprise.
The next day, our grandson taste-tested them. He literally stuffed his face until he looked like a little chipmunk.
Have you ever made blueberry pancakes? Sooo good!
I used the American-style pancake recipe from the Basic Thermomix cookbook and just spread some blueberries on while the dough in the pan was still uncooked.
