🌀SAGO WITH COCONUT MILK
Sago with coconut milk is a Burmese or Thai dessert. The main components of this recipe are Sago and Coconut milk. The dish can be decorated with many toppings; including coconut, banana, etc…

🔷Ingredients:
▪️Sago - ¾ cup
▪️Thick coconut milk – 1 cup
▪️Sugar – ½ cup
▪️A medium pot of water for cooking sago
▪️Cinnamon stick – 2 inches
▪️Salt – ¼ tsp
▪️Food colour – 2 drops (optional)
🔷Method:
▪️Bring a medium pot of water to boil.
▪️Add in the Sago to boiling water.
▪️Cook for 10 – 15 minutes until the sago just turns clear.
▪️Do not overcook the sago as it can turn too soft and soggy very quickly.
▪️Add food colouring (optional), salt and Sugar.
▪️Mix well and set aside to cool.
▪️Combine cold sago and coconut milk.
▪️Cover and put in the fridge and serve chilled.

🥚Egg Kottu :This is one of the most famous food item in Sri lanka. It is a dish that you can prepare from leftover parottas. Just tear those, add eggs, vegetables, onions and some spices to make it just taste as the same as you can find in your favourite kottu place.

🧾Recipe 🔻

🌀INGREDIENTS:
▪️Parottas cut into pieces- 10
▪️Onion (finely chopped) – 2 medium
▪️Ginger -1 tsp
▪️Garlic – 1 tsp
▪️Carrot – 50g (Julian)
▪️Leeks – 50g (Julian)
▪️Green chili – 2 (chopped)
▪️Capsicum – 2
▪️Fresh Coriander - 25g (chopped)
▪️Tomato – 1 large (cubed)
▪️Turmeric powder – ¼ tsp
▪️Chili powder – 1 tbsp
▪️Masala Powder – 1 ½ tbsp
▪️Eggs – 4 (slightly beaten)
▪️Salt to taste

🌀METHOD:
🔸Heat oil in a pan, add Onions sorte until slightly softened.
🔸Next add ginger, garlic and green chili. Sorte till the raw smell dissipates.
🔸Now add all the spice powders (chili powder,turmeric and masala powder).
🔸Stir and cook till aromatic, on low heat to prevent any scorching of the spices.
🔸Add the chopped tomatoes and cook in medium heat.
🔸Add salt to taste.
🔸Add the slightly beaten eggs to the cooked mixture. Scramble the eggs quickly. Before the eggs are completely set, add the vegetables(carrots, leeks and capsicum).
🔸Finally add the pieces of parotta and incorporate well into the egg masala.
🔸Use metal spatulas to chop up the pieces further into the masala as you mix them. (wooden spatula, if using a non-stick pan)
🔸Once the parottas are evenly covered with egg masala, stir in the fresh coriander leaves and remove from heat.
🔸Serve with a simple side curry(optional).

♦️TIP:▪️ “Use cast iron pan, for authentic taste, or use a non-stick pan, if that’s what you have.”

Roast Paan(bread) Yeah its a Sri Lankan foodies ever loving bread. It's amazing that you can make your own Roast Paan at home. Fresh and warm just as you get in the bakery. The warm, crispy outside and fluffy inside typical Sri Lankan roast paan ready to be enjoyed with chicken and vegetable soup. It also can be served with coconut sambol, potato milk curry or anything you like, or simply as it is with a hot cup of plain tea ☕️ that every Sri Lankan starts the day and ends the evenings with.


🧾Recipe 🔻

❇️INGREDIENTS;

🔸Flour – 500g

🔸Yeast – 2/4 tsp

🔸Salt – 1 ½ tsp

🔸Coconut/Vegetable oil – 2 tbsp

🔸Sugar – 1 tbsp

🔸Warm milk (as needed)

❇️METHOD;
▪️In a bowl add all dry ingredients and mix to combine well.
▪️Then add oil, warm milk and kneed to a very soft dough.
▪️Kneed gently for as long as possible for around 10-15min
▪️Brush with oil and set aside covered to rise. Once risen divide into 12 small balls.
▪️Take a bread pan or a loaf pan, grease slightly.
▪️Make a mixture with the oil and 1tsp of flour.
▪️Flatten each dough into shape of a roast paan. Place each flattened dough in the loaf pan as shown in the picture.
▪️Apply the mixture of flour and oil in between each dough.
▪️Now cover and keep it to rise for around 20 minutes.
▪️Preheat the oven to 180c. Bake the roast paan until slightly brown.
▪️Then take out the pan and peel off each slice and place them flat on a slightly greased baking tray.
▪️Bake once again on both sides until done and golden brown.

So here’s my mouthwatering vegetarian dish made for the Indian food lover’s. 🇮🇳
Naan, One of the most popular Indian flatbread made from white flour. Typically, yeast and curd are used to leaven the bread. The curd also gives the naan its characteristic, texture and flavor which makes it soft and the perfect accompaniment to any spicy Indian dish.
Paneer, a fresh and soft cheese made by curdling the milk with a drop of lemon juice is mingled together with some nice hara mattar (green peas).
Garlic Dal, a small legume of the pea family and an edible seed twisted with the pungent spicy flavor of garlic.

Try this Butter naan, Paneer matter masala and Garlic dal curry.

❇️[Dough];

💠Ingredients
▪️All purpose flour – 2 cups
▪️Sugar – 1tsp
▪️Baking powder – 1 tsp
▪️Baking soda – ¼ tsp
▪️Curd – ¼ cup
▪️Vegetable oil – 2tsp
▪️Salt to taste
▪️Lukewarm water as required, to need Other ingredients;
▪️Butter/ Ghee – 2 tbsp
▪️Coriander leaves finely chopped – 1 tbsp

❇️[Method];
🔸Firstly, knead the dough for 10 minutes with ingredients listed for the dough.
🔸Then cover with a moist cloth and rest for 2 hours in a warm place.
🔸After 2 hours, knead the dough slightly to remove if any air present in the dough.
🔸Next, Pinch a ball size dough and gently roll to a oval or round shape using a rolling (make sure you don’t make it too thin or too thick).
🔸Slowly flip over to a hot thawa/pan in medium heat and slightly press with a flat spoon. Also brush with some butter/ghee with coriander leaves.
🔸Finally serve butter naan hot with your favourite curry like matter paneer or garlic dal.

🔷[Paneer mattar masala];

💠Ingredients;

🔹Oil – 1tbsp
🔹Cardamoms – 2
🔹Garlic cloves – 3 cloves
🔹Ginger – 1 inch
🔹Onions – 1 cup (cubed)
🔹Cashew nuts – 10
🔹Salt – ½ tsp
💠Other ingredients;

🔶{For matter paneer gravy};

🔹Butter/Oil – 1tbsp
🔹Cinnamon – 1 inch
🔹Tomato – 2 large
🔹Bay leaf – 1 small(optional)
🔹Red chili powder – 1tsp
🔹Turmeric – ¼ tsp
🔹Garam masala – 1 tsp(optional)
🔹Coriander powder ¾ tsp
🔹Boiled green peas (hara mattar) – ¾ cup
🔹Water – 1 – ½ cups (use more if needed)
🔹Paneer – 250g
🔹Coriander leaves – 2 tbsp (chopped)
🔹Salt to taste

💠[Method];

🔶(for the paneer matter gravy)
▪️Pour the oil to the hot pan.
▪️When the oil turns hot, add cardamom, ginger and garlic. Fry for a minute.
▪️Next, add the Onions and fry until they turn golden brown.

▪️ Put the tomatoes, Turmeric and salt.

▪️ Saute for 2 – 3 minutes until soft and mushy.
▪️Add cashew. Cool this completely and make a fine puree without water in a blender.

🔶(for the paneer mattar masala);
▪️Heat the oil in the pan.
▪️Saute the cinnamon, bay leaf and pour the pureed onion tomato mixture.
▪️Add the chili powder, Gram masala and coriander powder. Saute until masala leaves the sides of the pan.
▪️Add the boiled green peas (mattar) and the water.
▪️Cook for 5 minutes.
▪️Add the paneer and cook for another 5 minutes.
▪️Stir well.
▪️Serve with naan or any flat bread.

Spring Rolls-Minced beef🥩 with little dice of potatoes 🥔 and onions 🧅 wrapped in spring roll sheets and fried in to golden brown... 😍

SPRING ROLLS
(beef spring rolls)
❇️Ingredients :
💠Filling
🔹Minced beef(any preferred meat) -500g
🔹Oil-2 to 3 tbsp
🔹Onions - 1 (cubed)
🔹Potatoes - 2 big (cubed)
🔹Coriander leaves - 100g
🔹Black pepper powder - 1 tbsp
🔹Red chilli flakes - 1 tbsp
🔹Ginger paste - 1 tbsp
🔹Garlic paste - 1 tbsp
🔹Salt to taste
🔸spring rolls sheets-20
🔸flour - 1/2cup
🔸water as needed
🔸oil for frying

❇️Method :
▪️Heat a pan,add onions, ginger, garlic, pepper, salt and chili flakes. Then stir until the onions are translucent.
▪️Add the minced beef or any meat as preferred and cook for 15 minutes.
▪️Add the small diced potatoes in to the pan and cook for another 10 minutes.
▪️Now spread each sheet of spring roll, place the filling as shown above and fold it into a roll and stick the edge with a mixture of flour and water to make sure that the edges are sealed.

▪️fry until golden brown.
