ChongQing Wanza Noodle|重庆碗杂面
Hey it is Yang,my name is there, as you see.
I actually had never been to Chongqing, just like never been to Tahiti, Bahamas or Egypt or Moscow. So about this dish was made up on my imaginations and life experiences.
Chongqing is a city in South West of China, well known from spicy food and its unique geographical form—it is called山城,It means a city sitting in mountains… and more like you are on 6th floor of a building but you are at a same horizon of your neighbor living at 1st floor of the building next to you.
Wanza noodles was original cooking for the porters in the city in the old time…and more originally it is from Dan Dan Noodle, Dan Dan means 扁担--the shoulder pole,so it is more like food for poor people, after labor work longing for something lifting the spirit up…
Chinese restaurants are always branding” comfort food”, I like it. But food is always something comforting as a basic, we need food, water, air and love to be breathing and living, like what a plant needed--soil, sunshine and water. It is basics, but sometime I forgot to enjoy the basics…when trying to reach something basic but it became some needs to meet more than to enjoy it and take it as a basic, it was something different. It lost its meaning on a way.
No matter this place is “comfort food” or “enjoyable” or try to be “a fancy place to go”, I do my best in my kitchen, with all touches of ingredients and timing of cooking. Some friend told me: “the market speaks”, but I think “Time will tell” and most of the time in life, to cross the finish line goes less and less important, the journey you were going for it, the mistakes you made and learnt from it, everything gets better little by little,that is the meaning of life.
