Ooh!! Keto Pizza is a favorite here!! We are a huge fan of fathead dough.. but this looks like an amazing texture!

This keto pizza looks amazing!!

YIELD: 4 SERVINGS
Keto Pizza
prep time: 10 MINS cook time: 20 MINS
Keto Pizza - no soggy crust here! Most fathead doughs are limp and flavorless. Not this pizza crust!

INGREDIENTS
2 large eggs
2 tablespoons cottage cheese (sour cream can be substituted)
2 tablespoons butter, melted
1 cup almond flour
1/2 teaspoon garlic powder
1/4 teaspoon pink Himalayan or sea salt
1 cup shredded cheddar cheese (or any other shredded cheese)
Optional Toppings:
low-carb pizza sauce (like Roa's), shredded cheese, pepperoni, sausage, veggies
INSTRUCTIONS
Preheat oven or air fryer to 400 degrees and line a baking sheet with parchment paper.

In a medium bowl, whisk together the eggs, cottage cheese, and butter. Set aside.

In a separate bowl, whisk together the almond flour, garlic powder, and salt. Add dry mixture to the wet ingredients and stir to combine. Mixture will be wet. Stir in the cheddar cheese.

Roll dough between two parchment paper sheets to desired size, thickness, and shape. The dough will be very wet. You will need to peel the top parchment sheet off and bake it on the bottom sheet of parchment on a baking sheet. Bake for 12-14 minutes or until desired level of crispiness. The longer you bake it the crispier it gets!

Remove from oven and load your pizza however you like with all of your favorite sauces, cheese, and toppings. Bake pizza for another 5-8 minutes or until the cheese is melted.

Yogurt Bark

Ingredients:
Two Good yogurt
Fresh or frozen berries(unsweetened)
Lilly’s Dark Chocolate chips
Zero Sugar chocolate syrup

1. Line a cookie sheet with parchment paper.

2. Spread yogurt onto parchment paper.

3. Cut berries into small pieces and add to yogurt.

4. Add lily’s chocolate chips and a drizzle of the the zero chocolate syrup

5. Freeze for a few hours but overnight is the best!

6. Break bark into pieces and add to a freezer container for storage.

Ingredients:

16 oz sour cream
1 oz packet ranch dressing mix
3 oz bacon bits in the packet not the plastic jar
1 c. shredded cheddar cheese

Instructions:

1. Mix together. It’s best if you refrigerate it for a day before eating!

I'm so incredibly grateful for my youngest miss!

At 36 weeks pregnant, we had +29 degrees Celsius temperatures here last week!

Not only is my little miss always willing to put lotion on my feet, she was more than willing to freeze her hands in ice water and help me get the swelling down in my feet!! 😆🤪

Cheesy Asparagus Casserole (Keto Friendly)

Ingredients
2 bunches asparagus
1 tbsp butter
1/2 oz cream cheese, softened
1/2 cup heavy whipping cream
1 tbsp chicken broth
1/4 tsp Italian seasoning
1/2 tsp garlic powder
1/4 tsp paprika
1/8 tsp salt
1/8 tsp pepper
1/3 cup parmesan cheese, grated
1/8 cup pepper jack cheese, grated
1/2 cup mozzarella cheese, grated
1/2 tsp red pepper flakes
1/3 cup bacon, cooked and crumbled

Instructions:
-Preheat oven to 400 degrees. -Wash and trim the asparagus, then grease the 9 X 13 baking pan and lay them in it.
-In a skillet melt butter on medium heat, then add softened cream cheese, heavy whipping cream, chicken broth, garlic powder, paprika, Italian seasoning, salt, and pepper. -Continuously whisk until the ingredients are thoroughly combined.
-Reduce to a medium/low heat and allow the sauce to simmer gently boiling until the heavy whipping cream has reduced and thickened. Keep whisking so that it doesn't stick to the bottom of the pan. It will take a few minutes for the sauce to reduce and thicken.
-Once it has thickened, add the parmesan and pepper jack cheese then continue to stir until the cheeses melt and the sauce is smooth.
-Pour the cheese sauce over the asparagus down the middle of the casserole dish, avoiding the tops of the asparagus.
-Next, sprinkle the mozzarella cheese and crushed red pepper flakes on top of the cheese sauce.
-Bake for 15 minutes.
If you prefer crunchier asparagus, you can reduce the baking time for 2-3 minutes.
-Remove from oven and add bacon crumbles to the top.
-Bake for another 3 minutes and enjoy!
