Every year on 9/11 I am reminded of the uncertainty, the fear, the sadness, and the patriotism I felt on this same day 23 years ago. I can’t believe it’s been that long, but I can remember every detail of where I was, what I was doing, and the tears that came over me driving home from work listening to “God Bless the USA” playing on the radio.
I love our country and all the good that is possible here on our American soil.
I’m proud to be an American, even when it feels like the people who make up this great country of ours are divided on political, economical, and social issues. The USA is a great place to be.
My heart still goes out to those families who lost loved ones on that fateful day. We love you, we stand behind you, and we mourn with you.

Throwback Thursday.
In our old home we had yellow oak cabinets. When we were getting ready to sell I had the crazy idea to paint them white. It completely transformed the look of our home.
I have dark cabinets in my current kitchen and looking back on these photos makes me want to paint them white too. 😜
Tonight’s dinner was 10/10. The best part is just how easy it was. I used a combination of frozen veggies I had on hand and some fresh veggies and herbs from our backyard garden.
I tend to cook on the fly … just adding what I want until it smells good. But here’s my best guess as to the recipe.
Garden Pasta Recipe:
1 box cooked bow tie pasta (or whatever shape you like)
2 sprigs of Thyme
1 sprig of Rosemary
2-3 fresh basil leaves
1/2 a white onion (chopped)
1/2 cup cherry tomatoes (halved)
1 small bag of frozen broccoli, cauliflower, and carrots
A few fresh carrots (sliced) - if you want more than the bag
2 tsp chopped garlic
2 tablespoons flour
1/2 tsp garlic powder
1/4 tsp onion powder
Olive oil or butter
Salt and pepper to taste
1 cup chicken broth
1/2-1 cup milk (I use rice milk)
Optional - Parmesan cheese
Roast the frozen veggies (and extra carrots) on a sheet pan drizzled in olive oil, salt, and pepper at 400*F for 10-15 minutes.
Cook pasta according to box directions.
In a Dutch oven or large pot, sauté onions, thyme, and rosemary in olive oil until the onions are soft. Add in the garlic and tomatoes stirring frequently so they don’t burn.
Add the flour and stir constantly for 2-3 minutes. Then slowly add chicken broth and scrape the bottom of the pot. Once the flour is incorporated, add 1/2 cup of milk. Give it a minute or two to combine and add more milk until you reach the sauce consistency you want. Remove the sticks from your herbs.
Add salt and pepper to taste, and cheese if you want to. Serve with fresh chopped basil and parsley.
You can add the roasted veggies and pasta to your sauce, or serve them all a la carte like we do in my home of picky eaters. You can throw in some leftover chicken, or cook up a meat that your family likes if you want.

I made these yummy s’mores cookies (with a graham cracker bottom) for a first day of school treat. They are so addicting!
I’ve definitely eaten more than I want to admit.
Recipe:
Make your favorite chocolate chip cookies recipe and add dried mini marshmallows to the dough.
Brush halved graham crackers with melted butter and place on your cookie sheet.
Spoon enough cookie dough to cover most of each graham cracker.
Bake at 350 F for 10-12 minutes. Let cool for 2 minutes on the pan before placing them on a cooling rack.
Try not to eat too many… but if you do, I won’t tell anyone. 🤫 ❤️ 🍪

For me, it’s my kitchen. We cook together, we eat together, we play board games at our dining table, and it’s where family and friends gather when they come over. ❤️
