Doing a limited run on some 15N20 high carbon cheese knives, aiming for them to be more budget friendly still with some great timber handles

A small delam meant that inside this big slicer, was a little petty wanting to come out
Something a bit different and out of the comfort zone, but happy with the end result

A lesson in temperature control, Apex Ultra does NOT like high forging temps..... a few cracks I've (Hopefuly) ground out, still lots of material to make something hefty

8.5" chef knife
This knife has been a real challenge, months of labour, lots of trial and error but really happy with the final result
If you're after a high end knife with awesome edge retention, this is the knife for you
core with refined wrought cladding, this steel is super tough, I could feel the difference both on the grinder and when hand sanding
