History of Vigan longganisa.
Longganisa was said to have originated from Mexican culture, but here in our country it was brought by the spaniards. The tradition of longganisa in Vigan has existed since the Spanish galleon trade (Do you imagine how old that is?).
Vigan longganisa used to be traded back then to travelers for it's long shelf life and the proud taste of locally produced sausage.
It is distinct from other sausages, do you know why? It's because of the use of local sugar cane vinegar known as 'Sukang Iloko' and ilocos grown garlic which we call "The white gold of Ilocos", these two are known for its distinctive taste.
Centuries have passed and a lot of changes have been adapted, longganisa used to be hanged to dry in open air, this prolongs it's shelf life, now it is being hanged dry indoors, it used to be sold without plastic packaging, now the local government only gives out the packaging to recognized producers like us!
Today we are still following the same tradition, with of course, set of rules implemented by the government.
From hispanic colonization era, this product has stood the test of time and is now known as Vigan City's proud product which is also being exported. We even have a festival for our longganisa.
