White Chicken Enchiladas ! The white sauce I made on the stove and once thickened I added sour cream and a small can of fire roasted mild diced chilies ! Then sprinkle remaining cheese !

Morning on this Monday !!! Convenient Casseroles in the works ! This is the Baked Burrito !!! Ingredients pictured and this one gets layered and topped with cheese then baked !!!! Layers of goodness !! Have a blessed day everyone !!! ❤️❤️❤️

Today I made the “ Cracked Out Chicken Tater tot Casserole !! This has chicken, sour cream, cream of chicken soup, chopped bacon, dry Ranch dressing mix, shredded cheddar cheese all mixed well and topped with tater tots !!!! You know ? I love a good casserole !!! Growing up my Mom made lots of casseroles ! So easy and a complete meal really !! Add a side salad or veggies or whatever you choose ! Casseroles also make great left overs !!! I find they taste even better the second day

Good morning ! It’s an absolutely beautiful morning ! I am up and at it and thanking and praising God because He’s blessed me with another morning ! So last week was crazy busy and it was wonderful !!! I’m ready and excited to make those “ Convenient Casseroles” !!! Yesterday I finished up an order of the Confetti Spaghetti that is to be frozen and I will send the shredded cheese on the side because at the end of baking time the cheese gets sprinkled on , pop it back into the oven long enough for the cheese to melt !!! I received some dinner orders and a couple breakfast orders so pictures will be posted !!!

In this moment I just realized it’s Father’s Day . Oh how I miss my Dad !! I know many of you know just how hard it is when we have to say good bye to a parent 😢😢A day doesn’t go by that I don’t think about my Dad . He was always there to help and guide and offer wisdom ! I still remember the date and time Doug called to tell me that “ we lost Dad tonight “. Now Holden and Aleah will have their first Father’s Day without their Dad ! Doug was such an amazing man ! I miss him everyday ! Lord, wrap your arms around every child grieving the loss of their earthly Fathers . Give them comfort and let them feel that you are near . Your word says you are a Father to the fatherless so today just let us all look to you to meet our every need ! In Jesus name . ❤️

Good evening friends !! So I’m in the process of trying to somehow combine my love of baking cheesecakes with expanding a bit into making meals each week ! I’m going to start with 2 !!! A breakfast casserole and a dinner / lunch casserole !!! This week the breakfast casserole is a Brunch Lasagna which is pictured !!! It was a favorite of my elderly I used to deliver meals to !! The other casserole which Is a BBQ Ranch Chicken Casserole !!!! All of the meals are in 13x9 pans and made with high quality ingredients !!! I use whole grain pasta, lean meats etc ! You can substitute !! Turkey for beef , white pasta , quinoa and veggies, brown rice and any others ! Now to come up with a catchy name to tie these two together !!!!

Also a reminder! The month of June is the Peach Cobbler cheesecake and the cheesecake pie is Peach Crumble !!
