Spending the evening making this delicious turkey chilli! Now this takes me back 5 years to Jan 2013 when I started cooking and delivering vegan, gluten-free soups, salads, dressings and flatbread to yogis and their friends all over Durham! Am I right 🥣

For the last few years we’ve ordered Chinese food on New Year’s Day evening...but being celiac it’s a little difficult to find something to eat! Made my own and it was delicious!!! I stick to white rice because brown rice does not agree with me: shrimp and broccoli sautéed in garlic, sesame oil and tamari sauce, topped with sliced almonds. Now this, was the best dish and no restaurant could have topped it! Happy 2018! 💚

This is probably my second casserole I've ever made (I hate this word btw) - this one is all veggies and quinoa topped with cheese. Now, is the trick to a successful casserole layers of cheese? I should stick to Buddha bowls but this was amazing with some organic gf nachos! Do you have any tips and tricks when it comes to successful healthy casseroles?
