OMG this was a delicious change from avocado & poached egg, sprouted oats ( easier on digestion) with pumpkin seeds, sunflower seeds, chia seeds & sweetened with elderberry Syrup !

Pumpkin seeds - contain iron, protein, fibre, potassium, zinc, copper, selenium, vitamin C, B, A E essential Amino Acids

Chia seeds - high in protein - can stimulate bowel function

Elderberry syrup, - used frequently during cold & flu season, loaded with vitamin C !

Topped with nuts !! A nutritious & healthy start to any day !

Reading through all my notes for a cancer client so that I can research their chemo etc & came across these notes, one of the reasons I ask my clients to eat organic where possible

Enzyme CYP 1B1 - found in cancer cells. Plants contain Salvesterols that convert into enzymes that can kill cancer cells.

Salvesterol rich foods - fruits, veg, herbs, but they need to be organic as sprayed foods do not contain Salvesterols

First attempt at seafood paella last night, it was actually quite tasty. Made in about 40-50 minutes, though that includes preparation time !

I used whole grain rice, as whole grain rice doesn’t break down as quickly as white rice & cause blood sugar spikes, brown rice is also loaded with nutrients

Fibre, vitamin B, calcium, magnesium, iron, copper & zinc !

Have been away for a few weeks so haven’t posted in a wee while, hope you are all keeping well and enjoying your weekend !!

This is fast becoming one of my favourite breakfast dishes

Sourdough, fermented bread - the gluten is broken down during the fermentation process so is easier for the body to break down

Mashed avocado - your s*x hormones such as oestrogen & testosterone are made from healthy fats

Tomatoes, poached egg & spring onions, topped with a little table salt as it contains iodine to support my thyroid !

Came across this interesting we diet check in a book this morning.

1) Do you eat breakfast ?
2) Is it a healthy well balanced breakfast?
3) Is your diet packed with plants? Vegetables, nuts, fruit,
wholegrains etc
4) Do you eat green leafy vegetables eg l=kale, cabbage, broccolli, brussel sprouts etc every day?
5) Do you eat oily fish like Salmon,mackerel, trout etc twice a week?
6) Do you eat nuts and seeds ?
7) Do you eat some organic food?
8) Do you mainly eat food that is in season?
9) Do you eat eggs?
10) Do you chew your food well?
11) Do you drink at least 1.5 litres of water a day?
12) Do you avoid sugary foods most of the time?
13) Do you cook most of your own food ?
14) Do you cook with coconut oil ?
15) Do you use olive oil for dressings and drizzles?
16) Do you drink Green tea or herbal teas ?

If you are able to answer yes to most of these questions, you are on your way to eating a diet packed with optimum nutrition .

Just reading some information by the Vitamin C Troll, he watched as farmers spent all day in the sun with no sun cream, the farmers explained that they used 15 grams of vitamin C & Dry vitamin E every 2 hours, if they still burnt a bit this helped their skin heal without sores or blisters. Interesting reading, I might try this protocol along with my organic suncream just for added protection in the sun !

When my son was ill we found out through some tests I had done that he did not break oestrogen down well, this may well have been a genetic thing, so I decided to up my own uptake of Indole 3 Carbinol (I3C)

I3C is a photochemical found in broccoli, cabbage, kale etc ! It is converted to DIM in the body & used to maintain healthy hormone balance.

Human reproductive cancers may be affected by oestrogen levels & I3C May decrease these levels, in a clinical study published in “ Nutrition & Cancer” in 2004 women with a history of Breast cancer who took DIM for 30 days had positive changes in oestrogen metabolism compared with a placebo group

Always consult your doctor as high levels can affect the break down of some medications

GET YOUR OATS / DIABETES

Oats, specifically oat bran contain a powerful anti diabetes nutrient called Beta - Glucans, diabetic patients given oatmeal or oat bran rich foods experience much lower rises in blood sugar. In fact 10% of your diet as beta glucans can halve the blood sugar peak of a meal.

Practically that means eating half oatflakes and half oat bran cold or hot as porridge, with a low GI fruit such as berries, pears, or apples & snacking on rough oatcakes, which have the most beta glucans.
