Nonporous granite greatly reduces wear over the long term. You don't have to worry about your chocolate getting fragments of "stuff" in it. The granite is sourced from a quarry here in the US and they are super easy to clean...The wheels were designed to crush through product like they're angry at the idea of nibs NOT being liquor...Seriously, these stones get after it.

We are all in on chocolate. We like the texture. We like the mouthfeel. And we like the ability to develop flavor throughout the refining process.

A maker and his machine...We are a family business built on one basic concept: we won't sell it if we don't use it. Sam designed a machine hoping it would work better than previous machines in his factory. What he got was a machine he totally digs working with. This is How We Grind: Part 9 - Batch Capacity..
This grinder moves weight. Like, for real. The sweet spot is 65kgs, based on bag of cacao. We aimed to design a grinder that caters to a "bag batch" size, and we did. Yes, it can process more based on your approach and standards. We have processed anywhere from 20-100kgs and the Rottar plowed through without any hesitation. It's a beast! But that 65kg batch of chocolate in 72-hours is just dreamy. Check out the vid and send us that inquiry email!!!

This Is How We Grind: Part 8 - Made In America
Happy 4th of July to those US based makers out there! To celebrate the holiday we are highlighting the fact that all Rottar machines are built from scratch in the USA. Every element, step, component, fabrication, and construction process happens domestically. Our company is founded on quality, and best way to ensure that is to do it locally. We thoroughly check each machine before it ships out, because we can. Quality assurance is a non-negotiable for us. Now check out the vid!

This is How We Grind: Part 7 - The Design
This machine was designed to efficiently process lots of chocolate. Bottom line. The top priority throughout the design process was extreme durability. An added bonus is that it looks so, so good. When you put all of that together, the Rottar stands as a proud piece of machinery in any facility anywhere in the world.

This is How We Grind : Part 6 - Add Nibs Like a Champ
It can be therapeutic, loading your grinder with nibs. One scoop at a time, coffee in hand, the morning at the factory unfolding, just reflecting on how good this chocolate could be. It's a beautiful scene. For a chocolate maker, getting your nibs going in a grinder is like that moment a marathoner gets into the last 3rd of the race. You've put a ton of work into the process already, pain and endurance unfolded, there is still a ways to go, but it feels so wildly good to see that liqueur form. The Rottar only makes that experience more awesome. Trust is on this, it feels incredible to load nibs in this machine.

This is How We Grind : Part 5 - Increasing Pressure
Our design is founded the concept of perfectly trued wheels mounted on a balanced mechanism will apply consistent pressure throughout the grind cycle. No herky-jerky stuff or random rattling noises. Now, increase the pressure downward on those wheels, and badda-bing-badda-boom, you have a very efficient machine. Get yours now! Hit us up!
