This piece is really making us work! 😂 So the sander burned out 😩💥 .. We went to go get another one from someone off of the Market place… Super excited cause it was only $15!!! Until I realized the whole pad thingy on the bottom was basically too ruined to be able sand without damaging. Luckily I caught pretty early and off we went to buy a replacement… that we didn’t find. .. cheap or easy or fast enough anyway. Luckily my wife realized we could simply replace it from the ine that burned out….. so We’ll start again today. 😅

Meatloaf, meat balls, burgers and Albóndigas are made with a combination of 80 % or higher Lean ground beef and turkey.

I saved a plate for myself this time!! Added an egg 🍳... This is my favorite way to break a fast! 🤤 😋!!! No grains or potatoes were harmed in the making of this breakfast!! Guisado/ Keto Beans/Cauli-rice , salsa Verde 🌶.

In case you missed it! Recipe in pics. 👩‍🍳 Anybody can Keto. There are no secret pills or menus. Take what you eat and a few swaps or minuses and you have yourself a pretty yummy keto friendly meal 😊. Picadillo can be made with corn, potatoes and lots of other veggies.. typically peas, carrots and green beans. Those too can vary. It’s a quick one pan meal on it’s own and very much al gustó (to your liking).

I swapped potatoes for turnips, ground beef for ground turkey and left out corn and carrots 🥕.

If you make more turnips that what you need save them and use for eggs and “potatoes “ the next morning... 😊😊😊😊

Gluten Free Pancit... I hope I don’t offend or disappoint tbh! I love exploring new cuisines and live in the realm of food fusions. Food is one of the biggest things we all have in common. If only we could all break bread together... or at least a good low carb option. 😆😊🤗

I’m not posting a recipe for this simply because I don’t dare pretend to do this classic dish justice! Use you choice of low carb noodles or gluten free. Sweetener of your choice. Swap out oyster sauce for a homemade keto version or keto friendly fish sauce and go easy on the onions 🧅. Find your favorite recipe and have fun with this yummy meal!!

Just gimme the frijoles!! This is the next best thing and so Keto friendly! This for sure isn’t a new recipe and honestly there are SOOO many recipes out there. This is an easy go to base recipe. Hopefully the pics help! Ingredients ⬇️⬇️ and How to in pics. 😋😋 🍆

Ingredients:
1 Medium-Large eggplant
1/2 a small yellow onion
1-2 slices of bacon (I use turkey bacon)
1/2 tsp paprika
1/2 tsp cumin
1/4 tsp chili powder
1/2 tsp black pepper
1/2 minced garlic or garlic powder
Salt to taste
1 tsp of your favorite bouillon
1/2-1 cup of water (depends on the size of your eggplant.

Tools:
Blender
Medium-large pan

Serves 4-6 depending on how much you serve. I prefer 1/3 cup because they are very filling. They also freeze beautifully! I personally haven’t had any issues in the past.

Smoked Ribs and Cheese Broccoli Cauli-rice just does something to my soul! I cook in large quantities so hopefully this 🥦 🧀 broccoli cheese cauli-rice will be great for your next social distancing appropriate get together! Makes approximately 17 servings... seriously.

Cauli-rice ( I use the big bag from Costco. It states 21 - 1/2 cup servings but it’s 17 - 1/2 cups once you squeeze the water out.. which is a must in my opinion).
8 1/2 cups of small cut steamed broccoli

THE SAUCE
6 tbsp unsalted Butter 🧈
1 cup hwc
4 oz softened or melted cream cheese
1/3 cup white wine (cause why not?)
2 1/4 cups shredded cheddar cheese 🧀
1 cup and 1 tbsp of hot water
1 tbsp mustard
1 (or 2) teaspoon fresh ground black pepper
2 pinches of ginger (I use whole dried ginger and a micrograter... is that how that’s spelled?)
1/2 teaspoon of paprika
Salt to taste (at the end)

The how to:
Thaw out Cauli-rice and squeeze the living heck out of it. It gives soo much better texture! I like to cook mine a little in a dry pan with a little salt and pepper to season. Fluff it out and mix with broccoli.

For the sauce you want to melt your butter in a pretty big sauce pan or small pot. Add HWC then cream cheese and whisk. Once that’s melted in all lovely like add the wine. Add cheese a cup at a time And whisk in between so it’s thoroughly incorporated. Once you’ve finished adding all the cheese you can slowly add your water while whisking. Add seasonings and let cook for 5-10 minutes. It should coat the back of a spoon. Pour over cauli-rice in whatever dish you’d like to serve or bake in.

Note* what I use per serving:
1/2 cup fluffed cauli-rice
1/2 cup steamed broccoli from fresh
1/4 cup sauce

We had a light dinner tonight and was craving a Keto Bar from Costco. It’s our favorite and what better way to make that salted Caramel flavor even more indulgent 🤤😋 .... Caramel Pecan Sauce 💜 Similar to Leche quemada or cajeta. 😋

Ingredients:
1 - 1 1/2 cup chopped pecans
1/4 tsp Himalayan Salt
1 1/2 cup HWC
9 tbsp of butter
1/3 cup and 2 1/2 tbsp granulated Allulose (allulose is super important in this recipe. It doesn’t crystallize like other sweeteners.)

Tools:
Sauce pot
Whisk
Glass Jar for storing

The How to:
Brown butter in pot. Once nice toasty brown add Allulose and HWC. Turn heat down to under medium to warm through cream and dissolve allulose. You can then turn it down between low and medium low.... it’s really specific to your stove. I only mixed a few times throughout the process but you still don’t want to forget about it okay? It took me about an hour to get to where I wanted my sauce to be. This is a low and slow process. 35-45 minutes will give you a thinner consistency and longer will give you an almost leche quemada consistency... think thick enough to spread on a keto waffle or the last few bites of your favorite Keto ice cream bar 😬😳😂. Stir in pecans and layer with my whipped yogurt base for an awesome Turtle Parfait... I’ll post that soon!

Keto Strawberry Shortcake Parfait

1 pint of strawberries
1 cup heavy whipping cream
1 cup plain Greek yogurt
1/4 cup powdered monkfruit sugar (or your choice)
Your favorite almond flour cookie pieces
1/4 preferred jam (I make one at home with allulose)

Tools:
Cold bowl (I place mine in the freezer for at least 30 minutes)
Hand mixer

The how to:

Whisk hwc in cold bowl until almost soft peaks stage. Add powdered sweetener and vanilla extract. Whisk together and add Greek yogurt. Whisk on high for a few more minutes. I prefer to use a piping bag or even just a quart size zip top bag with a half inch cut at one corner. Cut strawberries into small bite size pieces, place in bowl with jam and mix to even and lightly coat. I layer whipped yogurt, a few cookie pieces and a table spoon of strawberries. Repeat a second time and add a small cupcake like icing dollop on top. Finish it off with just a little cookie piece. This makes 10 servings and of course you can change it around to meet your macros.
Per parfait I use about :
1 1/2 cookie
2 strawberries
3 tablespoons of whipped yogurt.
