Single clone (95). Cradle coast origin. Wild fermented in neutral oak barrels. Transferred and aged in 1 year old barrels after a partial malolactic conversion. Bottled in February 2024. Coming to you SOON. $42.

ZYMO Wines: the realised dream of California native and Tasmanian transplant, Sierra Blair
Sierra has been working as a winemaker at Ghost Rock and Supernatural wines since their 2019 harvest. With much support, mentorship and encouragement, ZYMO has come to life for its inaugural 2022 vintage. The brand’s aim is good clean wine. With a focus on small lot vineyard parcels obtained from Ghost Rock holdings and from friends; small batches, wild fermentations, and attention to detail are forefront in showcasing the most important ingredient: the fruit.
