Grammy's Spaghetti Soup!
What a great way to warm up on a crisp fall day- I love this soup.
This recipe was passed down from my husbands grandmother - created during the recession.
He told me that he always enjoyed his mom's spaghetti soup when he was young, and it brings back wonderful memories when we make it. He eats it all day.
I have taken the liberty to add a few ingredients along the way, but this soup is just so easy and you can create your own traditional spaghetti soup to hand down to future generations.
This makes a huge batch -
1-Package of spaghetti (I like angel hair )
2- Pounds of ground beef
3- Boxes of low to no-sodium beef broth
1- Can of au jus
1- Large can of diced tomatoes
1- Large onion
2- Colorful peppers
4- Stalks celery
3-Cloves of garlic
3- Carrots
3- Potatoes (my husband loves adding potatoes)
1- Tablespoon ground pepper
1- Tablespoon onion powder
1-Tablespoon garlic powder
1-Tablespoon parsley
1-Tablespoon oregano
1-Tablespoon worcester sauce
In a large pot add broth, mushroom soup, and diced tomatoes - bring to a low boil, then turn down the heat
Chop Veggies
Heat Skillet with Olive oil and add veggies to simmer on medium heat for 3 - 5 minutes
Set aside in a bowl
Add ground beef into skillet and flatten out, brown until cooked. Drain beef into a bowl (save the fat until hardens and toss)
Set beef aside
Add pasta to the broth
Add beef and veggies
Simmer until pasta and veggies cooked
Serve with Garlic bread or yummy crackers- shaved parmesan is a nice touch too!
