“I am a part-time outpatient dietitian and diabetes educator at the University of Chicago Center for Advanced Care. I also own my own nutrition consulting business called Health-Right Consulting, LLC, where I have a variety of positions such as working with individuals with developmental disabilities who live in group homes, working with students and staff at Head Start preschool programs, and doing virtual counseling and presentations. I have served on the University of Illinois External Advisory Board for the Dietetic program for over 10 years.
“I enjoyed every minute of my time at the University of Illinois being a FSHN student. I held leadership roles in several organizations which taught me the necessary skills to later serve as President of my local dietetic organization and as a media spokesperson at the state level. My time in Bevier Café and other culinary based courses prepared me to teach healthy cooking classes and do live cooking demonstrations on various local TV stations. I obtained several summer internships through the University of Illinois network teaching nutrition at camps for diabetic children and at a weight loss program in California. These opportunities gave me the foundation and work experience to find my passion in outpatient wellness and diabetes education which led me to my ideal job at University of Chicago. I am so grateful for the education and experiences at University of Illinois in the Dietetics program!”
Meet our 2021/2022 Dietetic Interns:
Susannah Scaroni earned her B.S. in Dietetics from the University of Illinois in 2014. Before starting a master’s program in 2017, Susannah competed in the 2016 Rio Paralympic Games in the marathon in addition to the 2015 and 2017 World Championships. She will also represent the United States at the 2021 Tokyo Paralympic Games in the 800m, 1500m, 5,000m and marathon. Her love for sports and personal experience of the unique fueling challenges faced by para-athletes have driven her passion for sports nutrition especially as it relates to para-athletes. Her understanding of exercise metabolism through research within the nutrition and exercise for performance laboratory under the supervision of Dr. Nicholas Burd has enabled her to investigate the nutritional considerations of wheelchair marathoners based on novel characterizations of the athlete population. Susannah loves working with athletes to help them utilize nutrition as a tool for success and is excited for the many skills she will develop throughout the internship.
Meet our 2021/2022 Dietetic Interns:
Noelle Park received her B.S. in Food Science and Human Nutrition with a concentration in Dietetics at the University of Illinois. During her undergraduate career, she has worked in various areas of dietetics such as a research assistant for the C-N lab in the department of food science and human nutrition under a currently graduated Ph.D. student (whose research focus was on food insecurity), a diet technician at Carle Foundation Hospital in Champaign, Illinois, nutrition analyst at a new nutrition-AI company called Heali AI, and nutrition intern in the Illinois Nutrition Team, Illini Fuel. Ultimately, through her experiences, she has become more aware of food insecurities within the student population, developed an interest in working within the community to assist in food security and nutrition education. Moreover, she also developed an interest in working with student-athletes in sports nutrition and educating them for post-career. After becoming a Registered Dietitian, Noelle hopes to pursue sports nutrition apprentice hours and obtain the Certified Specialist in Sports Dietetics credential. She hopes to work with the collegiate athletic team full-time and at community centers, food banks, or local nutrition extension programs part-time to develop and run a program to assist low-income families who need assistance with budgeting on chronic disease nutritional management. In her free time, she enjoys Olympic weight lifting, spending time with family, and cooking. She is looking forward to getting the hands-on dietetics experience through the Dietetic Internship.
Meet our 2021/2022 Dietetic Interns:
This is Yue Luo, currently a graduate student in human nutrition at the University of Illinois at Urbana-Champaign. I got my bachelor’s degree in dietetics at UIUC in December 2019. During my college years, I volunteered as a nutrition peer educator at McKinley health center for a year, and I provided nutrition education workshops weekly on different topics including healthy buffet-style eating, dieting myths, and nutrition basics to multiple campus groups. I also had an internship at the University of Hong Kong-Shenzhen Hospital for two months and worked with a dietitian to provide individualized diet guidance and nutrition support to patients. Besides, I assisted the dietitians at the hospital to hold lectures on maternal nutrition and gestational diabetes to the public. I hope to work in the clinical or community field once I became a registered dietitian.

My name is Anita Litwiller. I received my
Bachelors of Science in Food Science and
Human Nutrition from the University of Illinois
in May 2020. I am currently working on a
Master’s in Human Nutrition.
After completing my internship, I hope to work
in an outpatient clinic assisting clients with
improving their diet choices and improving
overall health through nutrition.
In my spare time, I enjoy hiking, reading,
cooking, and playing board games.

Meet our 2021/2022 Dietetic Interns:
Yiyang (Eva) Liu graduated from The University of Illinois at Urbana-Champaign [UIUC] with a Bachelor of Science degree in dietetics concentration and a Master of Science degree in Nutritional Sciences. Throughout her years in UIUC, Eva has been working as a research assistant in Dr. Melissa Prescott’s lab, assisting multiple community nutrition programs. She has had various food service experiences in catering, cafeteria, and fine dining. In the summer of 2019, she worked as an intern in the department of clinical nutrition at Peking University First Hospital, where she assisted the RD with nutrition screening, assessments, and making educational material for patients with obesity and diabetes. Eva’s professional interests are clinical nutrition and nutrition education. She is excited about working in different nutrition care settings and hopes to help others understand the role of nutrition in overall health in the future.
Meet our 2021/2022 Dietetic Interns:
Jade Hamann received her B.S in Food Science and Human Nutrition with a concentration in Dietetics from the University of Illinois in 2020. Following graduation, Jade decided to peruse a M.S from the Division of Nutritional Sciences at University of Illinois conducting research with the Nutrition Exercise Performance Research Group. Under the supervision of Dr. Nicholas Burd, Jade has assisted in various research studies looking at the effect of dietary interventions on skeletal muscle mass. This time spent in research allowed for Jade to develop a wider knowledge of the complex interactions between exercise, nutrition and disease states. She also enjoyed interacting with study participants and is excited to interact with future patients. Additionally, Jade co-founded the Food Assistance and Wellbeing Program, a food pantry located on the University of Illinois campus for food insecure students. This experienced further emphasized to her the importance of community nutrition education to promote overall healthy eating behaviors. In the future, Jade hopes to use her RD credential, research background and community nutrition experience to develop evidenced based recommendations for future patients.

Elizabeth Gutierrez earned her B.S. in Food Science and Human Nutrition with a Dietetics concentration at The University of Illinois at Urbana-Champaign (UIUC). Elizabeth is pursuing a Master of Science degree in Nutritional Sciences at UIUC. Under the guidance of Dr. Melissa Prescott, her research examines the nutritional contributions of milk, 100% juice, and water in the diets of children and adolescents. Her professional interests are clinical nutrition, childhood nutrition education, and food security, all with the common goal of primary prevention of future chronic disease. Throughout her time at UIUC, she has been a part of many nutrition student organizations. Most notably, she was a part of Eat4Health, a registered student organization, that provided nutrition education and snacks to local schools in Urbana. It was through her own experiences and her time volunteering in these organizations that she realized she had a passion for nutrition policy. Elizabeth has several passions related to nutrition but is currently interested in pursuing a career in nutrition policy to make access to nutritious foods a priority by promoting health equity in underserved and underrepresented populations. She is extremely excited to begin the hands-on experience that is available through the internship!
Meet our 2021/2022 Dietetic Interns:
Flora Denton received her B.S. in Food Science and Human Nutrition with a concentration in Dietetics from the University of Illinois at Urbana-Champaign (UIUC) in 2020. During the final year of her undergraduate career, she began work on the research project that would become the focus of her master’s thesis—the vegetable intake and seasoning habits of individuals with type 2 diabetes. She is currently pursuing her M.S. in Human Nutrition at UIUC. Her interests are focused on the nutritional management of type 2 diabetes, and she has spent her time in the university’s Community Nutrition Lab working with this population. Flora returned to school to pursue her career in dietetics in 2017, five years after earning her A.A. from the local community college. In the interim, she worked in the foodservice industry as both a chef and a server. Her passion for dietetics was spurred by a combination of her love for food and her exposure to medical nutrition therapy when her partner developed prediabetes, and it drives her to learn all that she can to prepare her for her future career. In her free time, Flora enjoys getting creative in the kitchen and her home garden, and loves to express herself through painting, drawing, and building when she finds the time. She is thrilled to be taking the next step towards becoming a Registered Dietitian with the upcoming internship and looks forward to gaining more hands-on experience in the field.
Meet our 2021/2022 Dietetic Interns:
Eva Bacon received her B.S. in Food Science and Human Nutrition with a concentration in Dietetics here at the University of Illinois in 2020. She went on to pursue her M.S. in Human Nutrition also here at UIUC. Eva has been interested in nutrition since high school; however, it was not until her time at UIUC and the numerous hands-on experiences she had that truly sparked her passion for nutrition. One experience was during her time working at a pediatric whole health, weight management camp for a summer during her undergrad. It was through this experience that Eva was able to educate adolescence about nutrition as they worked towards reaching their health goals. This hands-on experience allowed Eva to grow as a nutrition professional as well as understand the importance of nutrition intervention during adolescence to prevent chronic disease. As a Registered Dietitian, she is eager to be a part of a profession that facilitates behavior change in individuals who are working towards reaching their fullest health potential.

She screens her floors for patients at nutritional risk and assist patients who may have poor appetite or malnutrition. She also trains dietetic interns as part of their supervised practice program and participates as an active member of the interdisciplinary team, working with nursing, pharmacy, logistics, speech therapy, case management, and physicians.
“I greatly enjoyed my time at UIUC; both the courses I took and the connections I formed have helped me in my future career. Everything we learned was carefully selected to prepare us for the internship, the Registered Dietitian exam, and our future careers. The internship was especially helpful to my career, as my clinical rotations took place at Carle, allowing the opportunity to get to know the other dietitians who eventually encouraged me to apply when there was a job opening. I feel that our dietetic internship is superior to many other programs whose students I have encountered, especially by the variety of experiences, particularly outpatient experiences that it offers.”
