After an amazing 10 day trip in Ireland on the first leg of my Celtic Connection Tour, my next stop is the stunning Swinton Estate......

As part of the fabulous Seafood Week, I will be cooking at the estate’s spectacular Gala Dinner in the beautiful Samuel's Restaurant.

The evening, beginning with a canapé and Pommery Champagne reception, and followed by a five-course seafood menu, is prepared by myself and the amazing team of Swinton Estate chefs.

Come and join us for the Gala Dinner. I am very much looking forward to seeing you at this magnificent estate next month.

What a day! Met the fabulous Tim Monroe from Monroe, a conpany based in Lisburn that began in 1979 and is now the GIANTS of Belting! Tim is the Company'DIrector, Chief Marketing Officer and Sustainable Lead.
What may you ask what I was doing there? Sustainable fashion designer? Industrial Conveyor Belts?
LOTS!!!!!
We put the world to rights after chatting for 3 hours 🤭
So refreshing to meet someone so passionate about the environment, sustainability and ESG!!

Happy Easter to all my friends anf family and to everyine who has supported ma and my business for over a decade. Being a for such a long time has been somewhat of a rollercoaster ride but one that I would never change!
Lots of new RESCUED projects in the pipeline that will launch some very exciting products very soon.

Today I leave my home in Cornwall and travel to Ireland for a week where I will be meeting the most amazing people, seeing the most amazing places, cooking and eating the most wonderful produce and listening to stories, old and new.

'The Celtic Connection Tour' has been crafted for me by three wonderful people - Eleanor McGillie Mark Rodgers and Santina Kennedy with the support of Josie Hutt from Cornwall Airport Newquay and the team at Emerald Airlines who operate the Aer Lingus regional services. I look forward to landing in Belfast City Airport.

I've packed my chef's apron which was a present for me from my best friend Peter McGahan 🙌 and made by the very talented Belfast woman Marie Nancarrow from Titanic Denim from my daughter's old jeans - Margot, Lola and Tilly. What an amazing way to reuse their jeans. Merci Peter and Marie!!

We'd like to share one of the best real-life Titanic love stories, Isidor Straus, and his wife, Ida. Owners of Macy’s Department Store in New York, they were on their way back from a winter in Europe on board Titanic.

Their love story is one for the ages - Ida famously said to her husband, "I will not be separated from my husband. As we have lived, so will we die, together.”
