STREUSEL PEACH MELBA PIE

INGREDIENTS
Streusel Topping
3/4 cup all-purpose flour
1/2 cup chopped pecans
1/4 cup sugar
1/2 teaspoon ground cinnamon
6 tablespoons butter or margarine, melted
Crust and Filling
1 refrigerated pie crust (from 15-ounce package), softened as directed on package
1 egg white, lightly beaten
1 can (15 1/4 ounces) sliced peaches in light syrup, well drained
2 tablespoons cornstarch
1 can (21 ounces) peach pie filling
1 cup raspberries

DIRECTIONS
Preheat oven to 400°F. For streusel topping, in Small Batter Bowl, combine flour, pecans, sugar, cinnamon and butter; mix well and set aside.

For crust, gently unfold crust onto lightly floured Pastry Mat. Roll to an 11 1/2-inch circle. Place crust in Deep Dish Pie Plate, pressing into bottom and up sides. Generously brush bottom and sides of crust with egg white using Chef’s Silicone Basting Brush.

For filling, in Classic Batter Bowl, combine peaches and cornstarch; mix until well coated. Add pie filling; mix well. Gently fold in raspberries. Spoon peach mixture into crust; sprinkle evenly with streusel topping. Loosely tent pie with aluminum foil. Bake 45 minutes; remove foil. Bake an additional 15-20 minutes or until filling is bubbly and topping is deep golden brown. Remove from oven; cool at least 3 hours.

8 servings

Calories 400, Total Fat 20 g, Saturated Fat 9 g, Cholesterol 30 mg, Carbohydrate 54 g, Protein 5 g, Sodium 210 mg, Fiber 3 g

U.S. Diabetic exchanges per serving:
2 starch, 1 1/2 fruit, 3 1/2 fat (3 1/2 carb)

Cook's Tips:
Korintje Cinnamon can be substituted for the ground cinnamon, if desired.

NATIONAL PUMPKIN CHEESECAKE DAY!!!

PUMPKIN STREUSEL CHEESECAKE SQUARES

THIS RIFF ON A CLASSIC PUMPKIN PIE HAS ALL THE THINGS YOU LOVE ABOUT FALL DESSERTS—PLUS A PECAN COOKIE CRUST AND STREUSEL TOPPING.

INGREDIENTS
18 pecan shortbread cookies, divided
1 pkg (8 oz./250 g) cream cheese
½ cup (125 mL) sugar
1 can (15 oz./15 g) solid pack pumpkin (1¾ cups/425 mL) (not pumpkin pie filling)
2 eggs
1 tbsp (15 mL) flour
1 tbsp (15 mL) Cinnamon Plus® or pumpkin pie spice
Thawed frozen whipped topping (optional)
DIRECTIONS
Preheat the oven to 350°F (180°C). Spray the wells of a Brownie Pan with oil. Place one cookie into each well, then set the remaining 6 cookies aside.

Microwave the cream cheese in a large microwave-safe bowl for 10–15 seconds, or until softened. Whisk in the sugar. Add the pumpkin, eggs, flour, and Cinnamon Plus®, then whisk until blended.

Divide the pumpkin filling evenly into the wells of the pan (the wells will be very full).

Finely chop remaining 6 cookies in the Manual Food Processor. Carefully remove the blade from processor bowl and sprinkle cookie crumbs evenly over the pumpkin filling (about 1 tbsp/15 mL over each).

Bake for 18–20 minutes, or until the edges are firm and pull away from the sides of the pan. Cool for 5 minutes, then loosen the squares from the sides of pan. Serve with whipped topping.

12 servings of 1 square

BRAISED CHICKEN WITH ROOT VEGETABLES
INGREDIENTS
6 slices uncooked bacon
8 bone in skin-on chicken thighs (3 ½-4 lbs (1.6-1.8 kg total)
½ tsp (2 mL) each salt and black pepper to taste
1 lb (450 g) small red potatoes
2 medium onions
4 medium carrots, peeled, cut into 2" (5cm) pieces in half lengthwise
1 pkg (8 oz or 228 g) fresh mushrooms, quartered
4 garlic cloves
¾ cup (175 mL) chicken stock, divided
½ cup (125 mL) dry white wine such as Chardonnay
2 tbsp. (30 mL) fresh thyme leaves, chopped
2 tbsp. (30 mL) flour
Fresh parsley, chopped (optional)
DIRECTIONS
Preheat the oven to 350°F (180°C). Cut the bacon into pieces. Brown the bacon in the Rockcrok® Dutch Oven XL over medium heat for 10–12 minutes or until crisp. Remove the pot from the heat; remove the bacon and drain on paper towels. Reserve drippings in the pot.

Season the chicken with salt and pepper. Brown the chicken, skin-side down, for 5–7 minutes or until golden brown. Remove the chicken. (Chicken will be partially cooked).

Meanwhile, cut the potatoes and onions into wedges. Thinly slice the garlic.

Add the vegetables and bacon to the pot; stir ½ cup (125 mL) of the stock and wine. Top with the chicken. Bring to a boil, uncovered, over medium-high heat.

Remove from the heat, and place in the oven. Bake, uncovered, for 40–45 minutes or until the potatoes are tender.

Remove the pot from the oven. Remove the chicken and set aside; keep warm.

In a small bowl, whisk together the flour, thyme, and remaining ¼ cup (50 mL) of stock.

Stir in the flour mixture and bring to a boil over high heat. Simmer for 5–6 minutes or until thickened. Serve the chicken with sauce and vegetables. Sprinkle with parsley, if desired.

Yield:
8 servings of I thigh and 1 cup veggies

Calories 330, Total Fat 13 g, Saturated Fat 3.5 g, Cholesterol 155 mg, Sodium 640 mg, Carbohydrate 18 g, Fiber 3 g, Protein 31 g
