Veggie sushi all ready for work lunch tomorrow. Sushi rice with a little white wine vinegar, salt and pepper, wasabi, carrots, cucumber, avocado, peppers and cream cheese. Just gorgeous with some soy for dipping 😋😋😋
Apologies for the absence of posts lately, my boy is now almost 19 months old and I am only just getting back into cooking and baking again. I can't wait to teach my boy how to cook and bake, if he is interested of course! We have a vegetable and quorn pieces stir fry, a butternut squash and sage risotto and some brownies. Nothing spectacular, but very tasty 😋

So sorry for the absence of posts, hoping now my boy is 1 I will find more time to bake and cook again! This is the first bake in my posh new slide and hide oven that my wonderful husband bought me. Some lovely dark chocolate brownies that I took to work for my lovely hard working colleagues 😀

Apologies for the lack of posting again, however a few more days of sleep training and I can start putting him down for naps all being well, and get my cook and bake on again, I can't wait!

Lemon cakes with lemon icing and candied lemon garnish
This is my second attempt at a victoria sandwich cake and it came out pretty good, dead chuffed with it! It is so light and fluffy and decoration looks good too for a change. I must say, I am pretty pleased with myself 😊
Oops, I seem to have made blueberry muffins again! They are loads better for leaving the batter in the fridge overnight 😀😋
Dinner is all done except for the Mexican spiced rice (I have found I have to make dinner while the baby is sleeping then warm it up later is the easiest thing to do!). This is black bean wraps with Mexican spiced peppers and onions and home grown lettuce. I have also made a quick home made salsa to go with them. Also going to have some sour cream with them too. Can't wait to try them!
The Mexican spice mix I make is cumin, coriander, paprika, smoked paprika, salt and pepper. Quantities of each to taste. I would usually put chilli powder in but my husband has stomach problems and can't have anything too spicy 😢
The salsa is red onion, tomatoes, red pepper, garlic, coriander and lime juice. Again I would usually put some chilli in there too but refrain for my husband's sake. Still tastes delicious though!
A simple apple crumble for later with apples from my brother in laws apple tree 😀😋😋😋
We made an unplanned visit to my husband's family yesterday so I made some quick lemon cakes with lemon icing. Not great looking but they tasted amazing 👌
It took me 3 attempts but I have finally made some decent blueberry muffins! (I hadn't realised you had to use a muffin tin for the first two attempts 🤦♀️)
I'm back! Made a victoria sponge for a friend's brothers birthday last minute. I am not the best cake decorator but have been assured it tasted good 😀🎂😋😋😋

Busy afternoon in the kitchen, home made pizza, home made aioli and profiteroles. I did make chunky chips to dip into the aioli too but didn't get a pic of them, they were good though!
Red onion, garlic, spinach and creme fraiche sauce, salmon en papiett (butter, salt, pepper and dill) with griddles asparagus. Rich, creamy and really tasty 😊😋

First attempt at a pineapple upside down cake on Saturday, tasted really good, a lot better than it looks! Also made some spring rolls today to take into work tomorrow 😊😋😋😋
It's been a very busy weekend in the kitchen! I've made Battenberg, sushi, bread, profiteroles and mille feuilles! Loved every second

Not often I make pies but this was specifically requested by my better half today. Home made quorn and mushroom pie with home grown purple sprouting broccoli, rosemary and thyme roasted carrots and some peas. Lovely Sunday dinner 😋😋😋🥦🥮
It turns out I have gestational diabetes, so I made a very low sugar and gluten free orange and almond cake this afternoon, and for a first attempt, it's not too bad! The cream cheese frosting was a little runny but other than that I'm pretty pleased with it
Mmm lasagne! This is a roasted vegetable lasagne with home made pasta, home made marinara sauce and home made bechamel. So comforting and delicious
As well as the 3 lemon cakes I made today, I also made some baba ganoush for the first time, some bread and some hummus for a healthy tea, it was all delicious 😋😋😋
