Tonight was Lasagna in the UltraPro Lasagna pan. To reduce carbs, I switched out the lasagna noodles on the top layer for zucchini. For future, I will reduce the liquid in the meat sauce because it was a little sloppy. Hubby didn’t even notice the swap. Lol. OK - I may have added a little extra garlic and basil.

Since we have been sticking around home more, I am cooking more. Today I made a Frittata in the Micropro Grill. I used the new ring in it which makes things round and keeps food in the middle/ hottest area of the grill. This frittata baked in 12 minutes.
It fed 2 of us for lunch and even though I loaded it with cheese, I estimate that it was 5 weight watchers points per serving.
