Tell us about one of your cocktails that you think could win in this competition: I like to use flavors that most people wouldn't think to use in a cocktail. I made a "fruitcake" cocktail that was a whiskey sour, but tasted like bread. The cherry walnuts syrup gave the cocktail the depth that bread has.
Meet Brian O'Malley another one of your 2024 BNB contestants.
Pie 314 has received a new Competition Submission form response.
First Name: Brian
Last Name: O'Malley
Where do you work currently?: The Branca Room
What inspired you to be a bartender?: Before the advent of modern chemistry, people pursued knowledge of the nature of the world around us through the colorful medium of Alchemy. This magical art fascinated me as a child, with its promise of creating fantastic wonders through secret knowledge, and though I never discovered the formula for the Elixir of Life, in my adulthood that fantasy has evolved into a love of chemistry and physics. I stood behind a bar for a few years before I began to understand the complexity of my fledgling profession; as it dawned on me, that magical feeling from my youth began to return: the idea that the sum of the correct ingredients incorporated in the correct amounts in the correct manner can produce a result that is greater than the sum of its parts. This realization began my nearly two decade long love affair with mixing drinks. It has been a crazy ride, but bartending is more magic than it is science, and it is perhaps the one thing in my life that binds the deterministic man of science I have grown to be with the little boy who believed that one could, with sufficient imagination, will lead to become gold.
What is your favorite cocktail to make: The sour. The effect of proper mechanical incorporation is often subtle, but with the sour, the more work and precision you put into it the more beautiful and delicious the finished product.
Who is your inspiration in the service industry?: David Wondrich. I have worked with a lot of bartenders who shared their time and experience with me and they will forever have my gratitude, but no one has ever fired my imagination or my motivation to grow in my craft as Wondrich did with his book Imbibe.
Give us a short bio about yourself: Dallas has been my home for the majority of my
Meet one of the competitors for BNB..

First Name: Austin
Last Name: Hoaeae
Where do you work currently?: Parliament
What inspired you to be a bartender?: My father is a bartender and has worked in dallas and made a name for himself over the years and truly has become a legend from his peers and people who have met him. Everyone always kept saying how great he is and honestly i wanted a piece of that so now im grinding engaging guests making connection and falling in love with creating new and exciting cocktails and techniques just to give guests a sense of wow! to eventually step out of my fathers shadow as a great bartender
What is your favorite cocktail to make: this one is a custom drink but i make it at home and for guests if the product on hand 1.5oz Suntory Toki .5oz amaro nonino .5oz guava reduction .5oz passion fruit reduction .75oz oj .35oz lemon juice 2 dash angostura wet shake double strain Collins spalsh sode topped crushed ice and mint bouquet. The idea of this is my favorite juice in hawaii called pog and this cocktail is just a perfect drink to remember simpler times and oh it is damn good.
Who is your inspiration in the service industry?: People without them there isn't bartending just being able to communicate with so many different people and making great memories for them to enjoy is the true inspiration from adding a twist to there favorite drink or just something off the wall matching there flavor profile really makes you think creatively what flavors work together to make them the perfect drink and from that some of my best cocktails have been made by given the challenge and thinking outside the box.
Give us a short bio about yourself: Born and raised Maui, moved to Texas early on and immediately got dragged into the service industry worked every position upwards learning in and outs fell in love with bartendi
