I make a killer toasted sandwich anytime of the day, for breakfast, brunch, lunch or dinner. Toast some good fresh sourdough bread, get creative with your toppings and something beautiful and delicious gets created ๐๐ผ

Baked Pistachio Crusted Salmon, garlic Shrimps, roasted Sweet Potatoes on a bed of mixed greens & a side of Couscous Salad ๐ฅ๐๐ผ
Havenโt posted in a while. Been busy living life. Cooking beautiful delicious dinners of course ๐๐ผ
Been staying in for dinner date nights past few Sundays making romantic delicious foods for mi amore. Hereโs a small photo dump from the last two Sundays ๐ ๐ซ๐ฅฉ๐ฑ๐
1. Shrimp Pasta in my creamy tomato โsecretโ sauce with Burrata & Caprese Salad
2. Lamb Chops (for him) with Greek style oven roasted Lemon Potatoes & Roasted Bell Peppers.
Served with sides: Feta, Tzatziki, Pico de gallo

Saturday evenings are for simple romantic dinners, wine, and good conversation. Agree?
On tonightโs menu: Oven roasted Haddock with Asian Cabbage ๐๐ผ
Recipe โฌ๏ธ No measurements
โข lightly season the haddock
โข bake at 350 for 20min
โข meanwhile sautรฉ the cabbageโฌ๏ธ
โข thinly slice white cabbage, red cabbage & a carrot
โข in a wok sautรฉ chopped garlic & minced ginger in walnut oil
โข add the cabbage
โข add soy sauce, stir until cabbage is coated, cover and simmer for 10min
โข add Mirin, more soy and honey
โข simmer until cabbage is tender approx 20min while the fish is baking
โข serve and sprinkle with sesame oil

Scramble on toast. Fluffy eggs, Ezekiel bread, sautรฉed baby kale with peas, sprinkle of walnut oil ๐๐ผ
Trying to finish up the last carton of eggs before I start my green plant based diet next week. Toast & eggs anytime of the day, you canโt go wrong. Next time it will be scrambled tofu ๐ฑ

Simple Overnight Oats๐๐ผ
no fuss. no unhealthy drive through breakfast. no time wasted. only goodness.
RECIPE โฌ๏ธ
Makes 4 Mason Jars
Ingredients:
โข 2 ripe bananas, 1/2 per jar
โข 4tbsp chia seeds, 1 per jar
โข 4 sweeping tbsp quick oats, 1 per jar
โข 2 cups oat milk, 1/2 cup per jar
โข 2tsp natural nut butter
(of choice)
โข few nuts of choice
โข 2tbsp berries, 1tbsp per jar
โข honey & shredded coconut (optional) sprinkle per jar
Instructions:
Mash bananas with a fork, half per jar. Add chia seeds, oats, milk and stir. Mix well.
Refrigerate overnight.
In the morning add toppings.
Nut butter and nuts into two jars.
Berries into the other two jars.
ENJOY!
Last cheesy dish ๐ง Going back to plant based cooking for a while. Needed to use up the last of my Parmesan Cheese so I decided to make Scalloped Potatoes & Zucchini. Perfect dish to enjoy some cheesy goodness. Cheese is the only non plant based food I struggle to give up, I simply LOVE CHEESE! ๐ง๐ง๐ง But itโs time to get clean and green again ๐
