HOW TO PREPARE EGUSI SOUP
Ingredients;
• Dry fish,
• Dry meat,
• Stock fish,
• Grounded pepper 1tsp,
• ½ cup of crayfish (should be grounded),
• 1 small size of Onions,
• Vegetables (precisely Bitter leaf),
• 1 cup of Egusi (melon) should be grounded,
• 1 cube of maggi,
• 1 teacup of palm oil,
• 2 cups of water,
• 1 tea spoonful of salt.

METHOD
Get a clean pot. Place on the burner to heat and add a big spoon of palm oil on it. Allow the palm oil to heat then add the remaining diced onions 🧅 and stir so as to avoid burning. Add the grounded Egusi and stir-fry until it starts sticking to the bottom of the pot 🍲. Add the meat or fish stock 🐟 and water 💦 to the pot. You can add water 💦 if you don't like your soup too thick. Allow to boil for 15 minutes then add the meat, stock fish 🐟 and allow to boil. Add crayfish, maggi cube, grounded Cameronian pepper and the dry fish. Stir and allow to cook for a while. Take a small spoon 🥄 and check ✔️ to taste if there is enough salt 🧂, pepper e.t.c. Add the shredded Ugwu leaves and allow to cook for a minute. This helps retain the Vitamins gotten from the Vegetable 🍆.
Serve with hot rice 🍚, pounded yam, eba e.t.c.
