A large wild salmon brought up to the boil in a pan of water for 4-5 minutes, then left in the tightly covered pan to poach slowly in the cooling water overnight. Finally, skinned and decorated as you wish.

Pumpkin Oeuf en Cocotte. Its pumpkin time when I love using big round ones as a cooking pot, filling them with spicy chicken or vegetables. This year shops are full of small pumpkins called Munchkins - last night I topped them and scooped out the seeds before baking, then put an egg in the centre of each with a blob of blue cheese and popped them back in the oven for 7-8 minutes so we spooned out the flesh mingling with soft yolked egg and melting cheese - luscious!
Using up leftovers: last night's supper - basmati brown rice with 1 bulb fennel, 1 long red pepper, 1 large purple onion, 2 leeks, chestnut mushrooms, fresh ginger, and spiced chicken livers with a handful of rocket thrown in. It tasted very good.

A PERFECT MARRIAGE - elderflowers, with their uniquely scented flavour, are just coming into bloom. They are well known to marry well with gooseberries but with apricots the relationship is even better. Here are roasted apricots set in elderflower jelly.
MORE LOVELY FISH (and super healthy veg) - there was a craze for monkfish in the 1980's but I don't think I've cooked it for years - this was an excellent return to it, smeared with pesto, wrapped in thin pancetta and roasted. Served with fennel and spring greens in a delicious sauce of goats milk thickened with gram (chick pea) flour, flavoured with turmeric and nutmeg - non dairy, non gluten with the countless befits of the suoer spice, turmeric - what could be more healthy!
TURBOT TREAT - surely turbot is one of the best textured fish there can be - here's a fairly small one I baked in dry Vermouth with slivers of lemon, fennel, ginger and mild Turkish chilli flakes
The Alphonoso mango season is just starting so make the most of this miraculous mango while you can. Yesterday I set Alphonso slices in a fresh blood orange jelly - ultra healthy as no added sugar was needed - but it tasted even more luscious dribbled with double cream.
I always seem to be cooking red things but this was delicious last night; beetroot and sweet potato mash with red onions, spring greens (SUCH a good vegetable) and meltingly soft calves liver coated in crispy gram flour.
Last night's pud - baked cheesecake on chocolate digestive crust with flaked chocolate on top, seved with raspberry and orange coulis. Unfortunately my pig's cheeks, tomato, tamarind and coconut milk curry was wolfed down before I thought of photographing it!
Healthy scarlet supper - beetroot leaves with beetroot and carrot mash (the added carrot makes the taste wonderfully mellow). But we did have bangers too.
More Burmese street food ten days ago in Pyay - soft yolked quails eggs in crispy featherlight little rice saucers - a wonderfully sensual explosion in the mouth!
