For dinner tonight I made my “I NEED SALAD “, but the only fresh ingredients that I had were spinach, cucumber, fennel and parsley… That was a very good start but it was very bland in color so I opened up my cupboards and incorporated canned beets, canned artichokes and capers.... drizzled with olive oil and apple cider vinegar then sprinkled with some fresh chopped parsley…mmmm, hit the spot!!
Back to creating, now with the move being over… My freshest 2 minute hummus ...
