Every other Sunday is Pizza-Sunday in my home. Today I was craving for bacon and pineapple so thats went on the menu. I added some onion and peppers for some awesome flavor and crunch. I also used a homemade roasted tomato sauce which just makes this even more yummy.

You may think that eating healthy sucks, BUT my dessert expert partner says NO WAYS, NEVER, NADA! This beautiful dessert is a dark chocolate and avocado mousse with macerated blueberries and toasted almond shavings. It is by far the EASIEST dessert anyone can ever make and was the perfect end to a private fine dining date night with Chef Lorraine.

Yesterday I had some good fun in the kitchen with some plating variations for this awesome arugula, charred nectarine salad topped with roasted almond shavings and feta cheese crumbles...the pickled radish was definitely the 'cherry on top' .

No meat Monday! Try making a lentil and chickpea curry...I didnt have fresh coconut today so I just left it as a plain curry. Adding coconut milk turning it into a coconut curry Is a huge game changer...

Tired of grilling fish... try stewing it using these easy steps.
1. Matinate your fish with lemon juice and set aside... (I used grey snapper steaks)
2.Saute onion, garlic, celery, leeks...
3. Deglaze with white wine and season with cajun, black pepper
4. Add grated tomato, chopped parsley and chopped coriander and allow to cook
5. Finally, add your fish, cover with a lid. Turn fish over after about 5mins, and allow to cook for another 5mins.

Best served with a quinoa salad/ rice or even potato.
NB: I used NO SALT!

Tired of the same old way of having oats... thefitchef says 'try baking them'. It is an awesome way to prepare ahead and these can last safely up to 3 days in the fridge. When ready to eat, just warm them up in the oven/ microwave, serve with plain yoghurt and enjoy...😋😋😋💯
