Nothing like some homemade soup on a snowy day. ❄️

Broccoli and cauliflower chowder topped with some leftover chickpea pasta. Soup was made with frozen veggies and canned corn to save time and money!

Excited to pick up some butternut squash this week to make some butternut squash and apple soup.

Butternut squash is high in fiber, vitamin A, and Vitamin C. Both Vitamin A and Vitamin C play a role in supporting immune health!

Little afternoon pick-me-up snack between sessions.

Cucumbers, everything hummus, and pizza crackers that I got for super cheap since they were discontinued.

Probably one of my favorite things to do is shop the discontinued items at the grocery store. 🤣

Snacks don't have to be complicated. Also, I'm a fan of cucumbers for a raw veg option since they hold up pretty well pre-chopping and after slicing.

Add.

Let this be your word for the weekend and the whole upcoming week.

Instead of focusing on restriction, things you "can't" or "shouldn't" have, focus on what you can add to your day.

Add in an extra glass of water.
Add veggies to your plate.
Add in extra time for self-care.
Add a new book to your reading list.
Add an extra snack to fuel your body.
Add in time with a loved one.

Often, with diets and diet culture, there comes rigidness, a list of things you need to avoid, and honestly, a negative mental state.

So challenge yourself with "adding" something and see how you feel at the end of the week.

Do you find yourself feeling stressed when it comes to meal planning?

Swipe for some tips to reduce stress and save time!

->Come up with some meals to make each week and even some theme nights (Meatless Monday, Taco Tuesday, Sheet Pan Wednesday, etc).

->Utilize a crock pot or instant pot to create big batch meals that you can leave to cook for a few hours! Put all your ingredients into the pot and let it do the cooking for you.

->Make extra portions and freeze them so you can have leftovers for the rest of the week.

->Keep your pantry stocked with canned beans, grains, sauces, and vegetables so you can make quick meals.
