Put in the air fryer/oven at 400 degrees for 6-10 minutes. I like mine a little well done for a crispier topping. Enjoy!!!! 🤩

ACCOUNTABILITY POST" I've been back at this weight loss thing since I have gained lots of weight during COVID (and some prior). Its the sad reality of a sugar addicted person :I am however, committed to losing it again. Right now, I'm just focusing on the weight gain during COVID and still have 22 lbs to go to reach that. Once I am there, I will re-evaluate and see if getting back to my lowest weight is what I want and need. I recently started to have 2 protein shakes daily to replace breakfast and lunch, and a protein and veggie dinner, with fruit only as snacks. I havent been perfect, but pretty darn close to it. I have chosen Weight Watchers Blue to be my baseline and what I use to track, for now, Ive been having lots of salad and grilled meat, but want to change up my protein a bit before it gets boring. I will start off buy posting a protein dish that may be a nice change.

25 months post surgery update: I hate to admit it, but slacking off from my program and having wayyy too many carbs, I put on 8 lbs. No matter, I caught myself in time and have gotten back on a plan with BIOME Integrative Nutrition. This is the same holistic nutritionist that helped me get to goal. She has a jumpstart challenge and I am currently on day 8. I've already lost 3 1/2 lbs so I'm almost back to my lowest weight of 158 (amazing how much carb bloat I had). This challenge runs for 4 weeks and there's a great support group online with daily mind and body exercises to follow. Its called the Mind, Body, Belly Challenge. There's a daily menu, so it is very restricting (with the exception of each 7th day, where you have a free day), but its what I need right now.....I need someone to tell me what to eat, so I can get back into a routine thats healthy, AND to INCREASE my exercise. Now that summer has passed and Im not going to the pool 3-4X a week, I need a solid replacement, so treadmill, light weight and exercises have been the answer. There was a slow build up to increasing the time spent, so today starts the 30-40 min a day. Results inspire motivation! (and I feel great being in control again!
