Thank you for all the birthday 🎂 wishes! I had a very tasty dinner at Copper & Vine Tasting Room.
I can’t believe I didn’t get the yummy tiramisu. When you get outstanding ice cream for your birthday and full from all the other yummies, you just put it off for another visit.
Thank you for a great meal!
You create your story. This starts with believing in yourself and stepping outside of your comfort zone so you can grow!
I am so proud of my daughter, who set her eye on a leading role in Finding Nemo with Irving Youth Theatre https://irvingyouththeatre.com
Come see the show February 10th
And another “Hocus Pocus” egg, 4 days later!!!!!
We saw this idea on the news and took this freezing 🥶 weather opportunity to play with our food!
No, the photo is not edited, only cropped!
Hey, Dallas rarely gets weather this cold, why not have some fun?
What kind of favorite food memories do you have growing up?
Two of mine came up today.
1. I used to think my grandpa was a Magic. When he made us eggs 🍳 he would wave his hands over the uncracked eggs and say “hocus-pocus double yolk,”
Then he proceeded to crack the egg and magically, there were two yolks.
We were always amazed at how magical he was. Now, every time we crack an egg and get two yolks, It’s a hocus-pocus egg, and we know that grandpa is sending us a “wink” from heaven.
2. My mom always did some things with Food from time to time and we looked forward to the fun nights that dad was not home for dinner.
Besides getting excited about the usual trips to McDonald’s, one of the most fun meals was to have green eggs.
I started doing this with my daughter when she was young.
Now, she’s getting much older and I was excited to have her make me eggs today.
Guess what? Hocus Pocus egg, magically transformed.
Now, what are some of your favorite food memories?

Are YOU an apple snob? Do you always reach for the same type, or do you mix it up? For me, it depends on what I am using it for. I love to sink my teeth into a whole raw pink lady and prefer a granny smith when whipping up an apple pie.
So, why are apples so great? Nutritionally, they have a bit to offer. Here are some nutritional facts on one medium apple:
🍎 It provides 15% of the recommended daily value for fiber as well as a good amount of vitamin C and potassium.
🍎 When you consume the skins of apples, you're not only getting extra fiber but a variety of phytochemicals, AKA antioxidants!
That’s right, the saying "An apple a day keeps the doctor away" didn't get its popularity for no reason!
Some of my favorite ways to include apples:
🔪 Enjoyed sliced with peanut butter and a sprinkle of h**p seeds
🦃 Added to Thanksgiving stuffing
🍗 Made into an apple chutney and used as a topping on my favorite animal or plant protein
🥗 Added to a salad to cut the bitterness of other ingredients such as kale or broccoli
🥧 And the reason you’ve likely been reading for, my simple “apple pie” topping! You can add it to anything, from pancakes and waffles to overnight oats! It really is a (simple!) must make and I bet it’ll become a staple in your house 👇🤤
APPLE PIE TOPPING
1. Heat about 2 cups of water in a small saucepan. Add two chopped apples and a teaspoon of pumpkin pie spice.
2. Cook until the water has evaporated, and the apples are softened and fragrant. Depending on the firmness of your apple, you made need to add more water during cooking.
3. Add to your selected dish and enjoy!
Have you been there? You’re at a social gathering and out of the blue, your friend or family member makes an awkward and inappropriate comment to you about your weight, body, and/or food choices.😳
Now all eyes in the room are on you and the room goes quiet, you could hear a pin drop! Everyone is waiting for you to respond, and all you want to do is run! 😱
Okaaay, I may be over-exaggerating just a tad, but either way, it’s an uncomfortable situation to be in, am I right!?
Next time this happens to you, try out one of these responses (or one of the ones above⬆️) :
✨ “Discussion of calories eaten or the amount of exercise needed to burn off said calories are not needed."
✨ "I'm here to enjoy your company and appreciate mindful and meaningful experiences"
✨"There is no good or bad food."
✨ "I'm not open to having these conversations with you."
Honestly, if all else fails, stay calm and confident and just walk away. 💖
However you will be celebrating Thanksgiving this year, I hope this post brings you a bit more comfort and confidence to tackle those awkward comments if they do come your way.
