Homemade Beef Stew

1 Jicama (pealed and diced)
1 small bag of baby carrots
1 large Chuck Roast (I used about 5 lb, my local store had it on sale)
1 small onion (diced)
2oz Red wine vinegar
4oz Beef broth
Salt and pepper for taste

Directions
Take the chuck roast salt and pepper both sides. Heat a skillet and brown all sides of the roast. Then cut into bite size. Now in a pressure cooker or instapot add your jicama, carrots, onion and roast; pressure cook for 35 min. When done add more salt for taste.

By my calculations it has about 9g of net carbs per serving which is about 1 cup.

Base Layer
• 1 tbsp Avocado oil
• 1 large head Cauliflower
• 1/2 tsp Sea salt
• 1 cup Cheddar cheese (shredded)
• 1/4 cup Heavy cream
Beef Layer
• 2 lb Ground beef
• 2 tsp Sea salt
• 1/2 tsp Black pepper
Topping
• 1/2 cup Sugar-free ketchup (or regular ketchup if not sugar-free)
• 2 tbsp Mustard (or more if you love mustard!)
• 1 cup Cheddar cheese (shredded)

Instructions

1. Rice the cauliflower using a food processor or box grater. (Learn more about how to make cauliflower rice here.)
2. Heat the oil in a large saute pan over medium-high heat. Add the cauliflower rice and sea salt. Stir fry until the cauliflower is cooked and a little browned, about 7-10 minutes.
3. Remove from heat. Stir in the cheddar cheese and heavy cream.
4. Transfer the mixture evenly to a 9 x 13 in (23 x 33 cm) glass casserole dish. Set aside.
5. Preheat the oven to 400 degrees F (204 degrees C).
6. Lightly wipe down the saute pan to remove any cauliflower pieces, and add the ground beef. Season with sea salt and black pepper. Cook the ground beef until browned, about 10 minutes. Drain if needed.
7. Sprinkle the ground beef evenly over the cauliflower in the casserole dish.
8. Drizzle the casserole with ketchup (you can make your own sugar-free ketchup like this, or store bought is fine if you are not strictly sugar-free) and mustard. Sprinkle with shredded cheese.
9. Bake for about 10 minutes, until casserole is hot and cheese melts.

Cabbage Stew

{Ingredents}
Half head of cabbage shredded
6 cups of water
1 lb smoke sausage sliced
3 med potatoes pealed and cut into fours
1 med onion diced
3 sweet peppers diced
dash of salt, pepper, chilli powder, celery salt and paprika

{Directions}
Take the shredded cabbage and diced potatoes into a pressure cooker with 6 cups of water for 30 min. When done then add rest of the ingredients into the pot and let simmerfor another 20 min till the onions and peppers are tender.

Ingredients:
2 tbsp Butter
1 pkg Smoked Sausage (sliced)
3-4 Potatoes (diced)
1 Sweet Onion (diced)
Sweet Peppers or Bell Peppers (diced)

"Apple Pancake Popovers"
1 1/2c Flour
2tsp Baking Powder
1 Egg
Pinch of Salt
1/2c Sugar
1/2c Milk
1c Peaked and diced Apples
1/2c Brown Sugar

Preheat oven at 350. Using a muffin pan. Sprying pan into the cups to prevent sticking.
Now combine 6 of the ingredients ( add milk to get the right thickness of the batter. Now add 1/4c of batter into the muffin cups, then add the apples topped 28th Brown Sugar. Bake for 15 min let cool. You can eat them 28th or without syrup.

Mexican chicken; really easy to make.
1 box shell Mac & cheese
1 can dice tomato with mild chili
2 chicken quarters deboned
1/2 bg mex shredded cheese

Boil chicken till done sit aside to cool. Boil shell pasta in same water so that the chicken broth soak in. When done drain then add the cheddar sauce, tomatos, then the chicken. When mixed well then add the shredded cheese and mix.

{Chicken Pasta Skillet}

(Ingredients)
2c Whole grain Rigatoni Pasta
32oz Chicken Broth
8pc Chicken Breast
2tbsp Olive oil
2 tbsp Cornstarch
1/4c Water
1/2c Butter
1/2tsp pizza seasoning
Pinch of salt and pepper
Pinch of celery salt

(Direction)
Heat oil in a large skillet on med-high heat. Add the chicken breast cook until no longer pink in the middle. In a med pot boil water for your pasta. In another pot add the chicken broth. When your water is boiling add the rigatoni pasta with a pinch of salt. With the chicken broth you'll take a small cup add your cornstarch with a little water mix well then add it to the broth and wisk ft together when mixed remove from heat and add salt, pepper,celery salt, and pizza seasoning mix well. When the chicken is done add the pasta along with the sauce and let simmer for 10 min then serve with your favorite sides or by itself.

Ok so I know I haven't been on here for a while. Everything has been crazy lately. I have moved to another town to help take care of my dad and so my husband and I are trying to settle into our new home. Once we are settled I will be adding new recipes on here so please be patient with me plus we are expecting our first child in Jan 2016 so look out for healthy alternatives for expecting mothers so that you and your little miracle can have a health start. ;)

So my husband and I decided to go to Arby's and try their new Gyros. We purchased 2 of the roast beef, now I am not one for cucumbers, but their cucumber dressing is delicious; it's so refreshing it's like summer is already here. So to conclude I will be trying to make my own cucumber dressing and will add it to my page so the rest of you may try it as well. {Diana Love}

A lot of people have always told me that they wish they could cook. Well I can tell you this if you can read you can cook. Just grab a cook book somewhere; at home, library, or go to the nearest store and buy one; because I can tell you this you can cook as long as you can put your mind to it. Don't let anyone tell you that you can't; because if you believe everyone who says that you can't then you will start to believe that you can't, but I can tell you that you can. Anyone can cook! I believe in you!!!! And follow my motto"Keep calm and Believe in Yourself!"

{Kentucky Biscuits}Serves: 12

Ingredients: Foot Note*

2c All purpose flour

2 1/2 tsp Baking Powder

1/2 tsp Baking Soda

1 dash Salt

1 tbsp. Sugar

1/2 c Butter

3/4c Buttermilk*

Directions: Preheat oven to 400F

In a bowl mix the flour, baking powder, baking soda, salt, and sugar

Cut in the 1/2c butter until the mixture resembles coarse crumbs

Mix in the buttermilk

Turn out onto a lightly floured surface and knead for 2 min

Transfer to an ungreased baking sheet, roll into a 6x6 inch square and cut into 12 even sections (Do Not Separate)

Bake 15 min in the preheated oven until a knife inserted in the center of the square comes out clean

Separate into biscuits and serve hot

{Mexican Casserole}

Ingredients: Foot Note *

1lb Hamburger

1 can Tomatoes w/ Chili (drained)

2c Elbow Macaroni*

2c Shredded Cheese

1/2c Milk*

1c Velveeta Cheese*

Directions: Preheat oven to 350F

1) Brown the hamburger in a med skillet

2) In a large pot boil the Macaroni

3) In a small Sauce pan melt the Velveeta cheese then slowly add
the milk and mix till creamy.

4) When the macaroni is done drain the water then mix the melted
cheese, hamburger, and the can of tomatoes w/ chili; mix till everything is covered with cheese.

5) In a 9x12 baking dish you will then start layering the mixture into it. Start with the first layer then add some of the shredded cheese on top, add another layer of mixture then top with shredded cheese. Keep doing this till all the mixture is gone from the pot and on top of the last layer you will add rest of the shredded cheese.

6) Cover the dish with a lid and put it into the oven for 20min or till the cheese is melted and bubbly. Top with Parmesan cheese then serve while hot.

* You can always use your favorite instant Mac & Cheese brand.

{Chili}

3lb Hamburger
12oz Diced Stew Tomatoes
12oz Chili Bean
Tomato Juice
Shredded cheese, salt, chili powder

In a large pot brown the hamburger. Drain the grease then add the tomato juice, chili beans, stew tomatoes, salt, and chili powder ( to your liking). Then top off with shredded cheese.

{Oven Fried Chicken}

2c flour
4 chicken quarters
Salt and pepper for taste
Pre heat oven 400°
Baker about 1-1 1/2 hr
Bake half of the time then flip them over and bake rest the time.

{Roast & Potatos}

Get a good size Boston Pork Butt and pit in a slow cooker add a good amount of salt and let cook for 12hr. Take 6-10 potatoes peal and cook whole for 1hr. When done add about 1/2c butter 1tbsp salt and a dash of milk and mix till smooth. When the roast is done take the drippings pour into a small pot turn the heat onto medium add about 4-6 tbsp. of flour whisk till desired thickness. Take the roast and gravy put into a baking dish put into the oven for 30 min on 350.

{Pork Steak & Rice}

2 Pork Steaks
1pkg Side Rice
1/4c Milk
12oz Cream of Mushroom
Salt &Pepper and any sauce for basting.

In a medium pot fix the rice by directions on back of package. In a small pot combine cream of mushroom and milk. On a griddle or skillet; salt and pepper both sides of the steak and while its cooking baste with your favorite sauce. On a plate make a bed of rice add the steak then pour the mushroom sauce on top.

{Italian Sesame Pork Tenderloin}

1/4c Oil
1/2c Zesty Italian Dressing
1/2c Mr. Wong's Oriental Wok Sesame Stir Fry Sauce
1pkg Pork Tenderloin
Salt and Pepper

Take a large skillet heat the oil, zesty Italian dressing and sesame sauce on medium heat. Take the tenderloin salt and pepper both sides; lay gently into the skillet. Cook till br own and crispy around edges. Flip them over and cook the same. When done lay out on a plate for 5 min to rest and then serve with your favorite sides.
