Tonight’s creation! I finally tried the pressed then frozen tofu method and the texture comes out very chicken like. I’m excited to explore this technique further! I made a slaw out of my big Napa cabbage from and dressed it with a dressing or rice wine vinegar, fermented tamari, sesame oil, smoked sea salt, togarashi and lots of sesame seeds. There is also brown rice under there and a dollop of my homemade kimchi for one of my assignments. It’s yummy!!

Crazy rice for dinner. Carrots, red pepper, celery, radish, mushroom, endemame, kale sautéed in sesame oil with salt and pepper. Then add left over brown rice and heat till warm. Then add and green onion top and stir fry till desired consistency is achieved!! I added chilli garlic sauce and some infused tamari I made. It hit the spot!!

Lunch today! BBQ jackfruit with black beans, steamed carrots and green beans, mustard green and jicama salad with some quinoa on the bottom. Yummy!!
