HOW TO MAKE CHIN CHIN (FOUR DIFFERENT FLAVOURS)
1. VANILLA CHINCHIN
4 cups or 500g all purpose flour
1/2 cup or 100g sugar
1/2 teaspoon baking powder
1 large egg
180ml or 3/4 cup fresh milk (you can also evaporated milk or powdered milk)
8 tablespoons or 1/2 cup melted butter or margarine
1 teaspoon vanilla extract
1/2 teaspoon nutmeg or cinnamon
Pinch of salt
Vegetable oil for frying
Sift the flour, baking powder, nutmeg or cinnamon, sugar and salt into a bowl.
Add the butter or margarine to the dry ingredients and mix until properly combined
Add the vanilla extract to the the milk and mix well, then add the mixture to flour mixture
Also add the egg to the flour mixture and mix everything together until you form a dough
Knead the dough for about 3 minutes till smooth and not sticky
With a rolling pin, roll into a thin sheet on a floured surface and cut to your desired shape and size
Fry in vegetable oil until golden brown.
Drain excess oil with a kitchen towel
Let cool and enjoy
2. CHOCO CHINCHIN
Same as above but add 100g of Milo or ovaltine to the dry ingredients before, adding the wet ingredients.
NOTE
-If the dough is too strong, add a bit of
water.
-You may or may not omit the vanilla
essence and the nutmeg/cinnamon.
-You can also use cocoa powder but
you have to increase the amount of
sugar used in the vanilla recipe.
3. COCONUT CHINCHIN
Same as vanilla chinchin, but with the coconut chinchin, you would need a medium sized coconut.
-Break the coconut and pry out the
flesh.
-Blend the coconut flesh with about
150ml of water.
-Sieve out the milk and use in place of
the 180ml of milk used in the vanilla
chinchin recipe.
4. BEETROOT CHINCHIN
Same as the vanilla chinchin, but for
this, you would need a medium sized
beetroot.
-Cook the beetroot, blend with as little
water as possible and sieve out the
juice or alternatively use a juicer and
then add the juice gradually to the dry
ingredients.
-With the beetroot chinchin, it is
advisable to use powdered milk,
instead of fresh/evaporated milk, so
that the dough does not become too
watery.

HOW TO MAKE FONDANT RECIPE
INGREDIENTS
1. Icing sugar...1kg
2. C.M.C........... 1tbsp
3. Glucose.........1tbsp
4. Gelatin........... 1tbsp
5. Water.............. 8tbsp
PROCEDURE
Sieve your icing sugar first to avoid lumps then add your one tablespoon of c.m.c to the icing sugar mix it and keep it aside.
In another separate bowl measure 8tbsp of water add 1tbsp of gelatin to it and 1tbsp of glucose
On your gas then put water inside the pot place the bowl of your mixture inside the pot and start turning it until everything is completely melt then remove it from the fire
Make a well in your icing sugar and pour the mixture inside little by little and mix it very well then transfer it to the table and knead it until it's smooth your fondant is ready
STEP FOR COLORING FONDANT
Add some shortening to your work surface.
Then, knead a small amount of fondant until it becomes pliable.
Then use a toothpick to add the gel color a little at a time.
While you are kneading now and again pull the fondant to see how the color is incorporating. Do not overdo this or you will get a lot of bubbles.
Allow the fondant to rest until you achieve the desired shade. Just remember as the fondant sits the color will darken.
NOTE!!!
You can preserve your fondant in your freezer.

INGREDIENTS
- 2 Cups of Plain flour (Sifted)
- 1 teaspoon of Baking powder
- 2 tablespoons of
(I used )
- Β½ Cup of Sugar
- Β½ teaspoon of Salt
- Β½ Cup of Very Cold water (from the fridge)
- 1 egg
- 1 teaspoon of Grated Nutmeg
- Β½ teaspoon Vanilla flavour
- Desired Quantity of Vegetable oil for frying
Procedure
- Mix all the dry ingredients ( flour, sugar,baking powder, nutmeg, salt) in a bowl and stir
- Add the margarine in that same bowl and mix with the dry ingredients
- Then mix the cold water, vanilla flavour,egg in a cup or plate
- Afterwards, pour in the wet ingredients into the dry ingredients and mix thoroughly with wooden spoon or clean hands...
- Cover the Buns mix for 5 - 10 minutes to rest well
- Heat up your Vegetable oil in the frying pan or deep fryer using medium heat
- Scoop the buns mix into the oil and Fry the buns for 10 to 15minutes till it turns golden brown
-Repeat the same process until you are done..
Please note- For more Quantity of Buns, increase or multiply this recipe..
- And if you dont want it Crunchy, use normal room temperature water to mix...and not very cold water
- The Buns Mix should be Sticky almost like Batter and not Dough like

DarecipeQueen's Special Buttermilk Chocolate ...It's so easy to Bake
Ingredients needed
225g of Flour
250g of Dark Brown Sugar
50g or Β½ cup of Excellent Blend Cocoa Powder
1 Cup of Buttermilk
1 teaspoon of Baking powder
1 teaspoon of Baking soda
150 grams of Butter or Margarine
2 Large eggs
2 teaspoons of Vanilla flavour

cup of Water
1 tablespoon of Browning
Procedure
- Form your Buttermilk & set aside
- Put the Butter/Margarine, Brown Sugar & water in a Saucepan & place over low heat; stir till all dissolves. Then allow to cool a little bit
- Sift the flour, baking powder,baking soda into a bowl, then add the cocoa powder. Mix all these dry ingredients together with a hand whisk , afterwards Sift all together into a Mixing bowl
- Then break your eggs into another bowl, add the flavour and Buttermilk , slightly beat the mixture with a fork to blend, then combine the mix with the one you heated( that is the butter/Margarine, brown sugar & water mix)
- Finally Pour the wet mixture into the dry ingredients in the bowl & also add the browning & mix all together.
Make sure all the ingredients are well incorporated and combined
Mix thoroughly with either the hand whisk or mixer for 3 minutes ..make sure you scrape the side of the bowl too with your spatula to get an even cake batter.
- Finally pour in the cake batter into prepared pan/pans and bake in a preheated oven ( please make sure you line the base of your pan or pans with parchment/brown paper so that the cake can come out easily after baking)
- Then bake till the cake is firm to touch atleast 30 to 45mins using a moderate oven temperature.
Note - if you dont have already- made buttermilk, you can form your homemade buttermilk by mixing 1 cup of Liquid milk and 1 tablespoon of white vinegar or Real Lemon juice ,leave it for 5 mins to mature before use.
Then if you want your cake darker brown in colour, you can increase the browning or cocoa powder ( in the case of increasing the cocoa powder, you need to also increase the quantity of sugar)

Ingredients
5 Cups( Level) of All Purpose flour
150g of
1 teaspoon of salt
4 teaspoons of dry active yeast
1 cup of warm milk
150g of granulated sugar
3 Eggs
Extra Things needed
Vegetable oil for frying
Extra Sugar (optional)
Strawberry Jam ( optional)
Extra flour( for the work surface)
Piping bag
Scissors
Squarely cut parchment paper
1 Dowel rod
Procedure
- Place your cup of milk into a bowl of hot water just to make it warm and bring it out as soon its warm
- Combine all the other ingredients(excluding the extras)in a mixing bowl and mix with the hook attachment.
-Mix together till the hook grabs all the dough and its very smooth - Afterwards, bring out the dough..knead well ,
- Cut out desired size and mould , then place on top of the squarely cut parchment paper ,Afterwards allow to rise and double in size for like 1 hour
- Fry in a deep fryer or frying pan
- Then remove fried doughnuts from oil when it turns golden brown
- Allow to cool before you serve
But incase you want to convert it to Jam Doughnut...
Warm the jam using indirect heat for 2 minutes,then pour it into a sieve and extract the smooth jam by using your spoon to press it out from the sieve into a plate.....then pour the smooth Strawberry jam into a piping bag and cut off the tip , afterwards create a halfway hole with dowel rod in the doughnut. Then press in some jam into the doughnuts individually...
- You can toss the doughnuts into granulated sugar poured onto a tray or in a bowl.
