GF Turkey, sweet potato casserole and stuffing ready for Thanksgiving tomorrow!

I spent almost a week in Philly for a work trip in June. Oh my goodness.. there’s so many delicious options for celiacs! Everyone was so kind and understanding. My colleagues Uber driver ended up giving her a list of restaurants to try in the area. Here are the highlights!

Dim Sum by Jane G’s - Singapore Mein Fun, Pork belly Pad Thai and Shrimp Dumplings - everything was amazing! They put a twist on the traditional flavor profiles as well. I could have eaten here every night.

Reading Terminal Market a dedicated GF restaurant specializing in fair food! The sweet potato and chorizo corn dog was a favorite and you can’t forget the cheese curds or fried cookies and cream 🥰

has the best all American food! It’s been years since I’ve had crab cakes + they didn’t disappoint. I’ve also been there for brunch before. So many options!

The head chef came out to talk to me. Our server was so sweet and understanding as well. Highly recommend their signature dish ‘rigatoni D’ - it was made with penne instead but still mouthwatering! My only wish is that they had GF bread to dip in their olive oil and spice blend at the table.

An amazing lunch yesterday The presentation was beautiful and the food even more delicious. Highly recommend trying the Wildberry pancakes and the tacos! Can’t wait to visit again the next time I’m in Little Rock. Thanks for a great experience!

My colleague and I spent some time in Syracuse for a conference. We heard raving reviews about so of course we had to go! I was torn between Alfredo and pesto sauce.. but they had pesto fredo.. blew it out of the water!

We travel to NJ a lot to visit family. One of our best finds has been as a halfway point to eat some delicious poutine!! 😬 highly recommend if you’re ever in the Bethlehem, PA area.

Do you miss Chinese food? You have to try out this orange chicken! 🧡 The flavor is amazing but doesn’t leave you feeling blah and bloated like regular Chinese food.

Chicken bacon ranch pizza is a new favorite in this kitchen 😍

Hi friends! It’s been a while. Have no fear, I’m very much still on the hunt for the best gluten free finds. I was able to visit twice this week while on the road for work. Hands down my favorite place to eat.

Newest favorite is Creamy Tuscan Shrimp - roasted tomatoes and spinach in a creamy parmesan sauce with shrimp and pasta 😍 Working from home this week meant experimenting in the kitchen!

It’s been a busy few weeks with work - made chicken and dumplings and revisited some classics: grilled cheese and tomato soup + taco dip! Recipe for chicken and dumplings will be featured in the .herald next month!

Lots of cooking to share from this weekend. First things first, I love repurposing leftovers. Sirloins on the grill with a creamy parmesan mushroom sauce, roasted potato medley and grilled zucchini. The next morning —> steak, pepper and tomato omelettes with skillet potatoes 🙌

Traveling for work definitely has its perks.. like taking a slight detour on your way home to have lunch at your favorite GF cafe 🥰 Chicken and Waffle sandwich happened to be on special too 🙌 Not to mention fantastic desserts!

Always love my time spent in Little Rock with colleagues who’ve become friends.. the food isn’t so bad either 😆 Keep scrolling for the belated birthday goodies that were left on my desk as a surprise. The original treats got lost in the mail, but my bet is they looked too good to deliver 😂

Turkey Zoodle Bowl with a flare 🤩 this is the second time I’ve made this dish and I’m happy I experimented a little bit more! The fresh cilantro and avocado on top really elevated the flavor combination. There’s also something about a colorful dinner that makes me very happy ☺️

Buffalo chicken Mac and cheese tonight! I have to experiment a bit more with the amount of cheese sauce. The cassava flour pasta absorbed the sauce a little too well - still pretty tasty though!

Friends, it’s been a while. I’ll admit that work has kept me quite busy. Many of my meals have been on paper plates or meal prepped into Tupperware containers— so they’re not as visually appealing. My happy place is truly when I am creating yummy and healthy foods. I haven’t taken the time lately to experiment with new recipes. My creativity sparked today and I’m glad I took advantage of it. Behold the southwest orzo bowl with avocado dressing!! It only took one bite before Pat and I were hooked. This dish had me dancing in the kitchen - it’s that good. I’ll be sharing the recipe in my next The Hancock Herald column (first issue of May). Happy Easter everyone!

Two burger posts in a row? Yep, and I’m not mad about it either. 🤣 I have lots to share from my travels with my new job. I’ll do my best to keep you up to date when I can. When I was in Little Rock for orientation, I was able to visit and brought home lots of goodies. Highly recommend checking out their online shop. The hamburger buns are the best I’ve ever had 😍

The best Valentine’s Day dinner ever 🥰 Ribeye steak with garlic and Gorgonzola, roasted asparagus and potatoes. Homemade Chocolate covered strawberries for dessert. They may not be as pretty, but they sure tasted yummy. The best part? We didn’t have to substitute anything to make this a safe, grain free meal.
