Homemade Socca- which is chickpea flatbread- originated as French peasant food. We had this recently on a visit to Nice and it was absolutely amazing! I found a recipe that was very similar and I was able to reduce the oil content significantly. I’ll share how I did it in the comments

Eating healthy isn’t complicated

Hi! I’m Heidi and I began eating a whole foods, plant based diet several years ago. I have always enjoyed cooking and spending time in the kitchen. I recently received my certification as a Nutrition and Wellness Consultant so that I could pursue a career that I love. My focus is to show people how to incorporate whole foods into their daily diet. This is a lifestyle-not a quick fix for weight loss. (Although weight loss typically happens) I’m available for one on one (in person or via web) consultations to help anyone who is looking to make some changes and to begin their journey to a healthier way of eating.
