Sometimes your day doesn't turn out as you plan. It turns out better.

Today I expected to be busy working but a last minute change of schedule left me with a free day, so I decided to play courier driver and return a much needed item to my sister.

For dinner last night we created this delicious concoction which is the love child of a chicken caeser salad and toss salad.

I created this last minute dressing with ingredients I could find in the house, and was pleasantly surprised with the results.

INGREDIENTS
🔸️ 3 Garlic Cloves, chopped
🔸️ 1/4 cup Lemon Juice
🔸️ 2 tablespoons Apple Cider Vinegar
🔸️ 1 tablespoon Dijon Mustard
🔸️ 1/2 cup Extra Virgin Olive Oil
🔸️ 1/2 cup Parmesan Cheese, grated
🔸️ 1/2 teaspoon Ground Black Pepper

INSTRUCTIONS
Combine all ingredients in a blender and puree until emulsified.
