Donβt worry be ....
What does it mean to be happy? For the first time in my life I think I can truly say Iβm happy in every aspect. And thatβs not a humblebrag because thereβs still the usual stresses and challenges going on behind the scenes. Itβs more of a mindset shift. I donβt dwell on the problems anymore. I set about solving them and then just enjoy the good stuff in my life. Like the fact that I can afford to buy and eat a varied and healthy diet. That I am mobile and can get about with ease. That I live in (in my opinion!) one of the greatest cities in the world and can explore it and build lasting memories, and of course, that I have an amazing group of people around me who inspire and push me to do more. Iβm looking at you π so donβt worry about it, focus on your happy.

How true is this? Too often I find myself overthinking things and making it way more complex than it should be. But that just ends up stressing me out and doesnβt solve anything. So now I have a motto just to let things lie and to keep everything as simple as possible ππΌ

Hands up, who else sometimes feels like this? Itβs 100% normal to sometimes feel like you donβt want to get out of bed, to put the extra effort in, to give up, but itβs those moments where you push through that you get the best results πͺπ»
Pic from dinner the other night. This was actually the kidβs plate, mine was missing the pitta π good nutrition starts from childhood and I always do my best to stick as many veggies and good things on the kidβs plate as possible. That usually involves hiding veggies! But she likes cucumber so thatβs front and centre in this pic ππΌ
Weβve got roasted lamb leftover from Easter dinner, mixed with spinach, mushroom, onion and in a brown pitta with some tomato cous cous, yoghurt/mint dip and cucumber.

Did somebody say pancakes?!?! ππ₯ππ₯
Iβm a bit late to the pancake party but better late than never right?! π
this delicious stack was made from a banana, two eggs, splash of vanilla essence and a pinch of baking powder. Smush together (highly technical cooking term there!) and fry like a normal pancake (although I prefer mine a touch smaller for extra thickness). Top with whatever you want, I picked strawberries, chopped nuts and a drizzle of honey π―

Lunch al-desko today, meaning I treated myself to some Eat Middle Eastern Tabbouleh β€οΈ walking around the communal area in the cowork space Iβm in today, soooo many people were having salad. I saw delicious ones, not very balanced ones (some guy just eating tuna and salt π±) and those sad sad salads of just limp leaves.
