Banana Water Fruit Popsicles
Makes: 12
Prep time: 10 minutes
Chill time: 6 hours
Ingredients:
2 cans (16.9 fl oz each) Woodstock Organic Banana Water
1 large kiwi, sliced into rounds or half moons
1 cup sliced strawberries
1 cup blueberries
Optional: ยฝ cup diced mango
Divide the fruit between 12 popsicle molds. Arrange it in the mold randomly (it will shift when you pour in the banana water).
Fill each mold to the top with banana water. Place popsicle stick in each popsicle mold and freeze for 6 hours, or until frozen solid, before enjoying.

Strawberry Banana Smoothie

Ingredients:
2 ripe bananas
2 cups frozen Woodstock Organic Strawberries
1 cup frozen Woodstock Organic Pineapple or Mango
ยฝ cup plain or vanilla Greek yogurt
ยผ cup Woodstock Organic coconut flakes (optional)
1 ยฝ cups Woodstock Organic Banana Water
Directions:
Add all ingredients to a blender and blend until smooth and creamy. Enjoy!

Raspberry Pomegranate Curd Tart
Prep time: 30 minutes
Chill time: 4 hours
Serving size: 10
Ingredients:
Crust:
1/2 cup Woodstock organic almonds, finely chopped/ground
1 1/2 cup Woodstock organic Instant Oats
4 Woodstock organic medjool dates, pitted and quartered
1 teaspoon vanilla extract
1/4 teaspoon salt
4 tablespoons butter, melted
Filling:
10 oz Woodstock organic frozen raspberries
1 cup Woodstock organic frozen pomegranate
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons lemon zest
1/2 cup unsalted butter
ยฝ cup white granulated sugar
4 eggs
2 tbsp cornstarch
Directions:
All almonds to a food processor and pulse until they form a fine mixture. Add all other crust ingredients to the processor and pulse until the mixture comes together.
Press the crust into a 9โ tart pan with a removable bottom. Refrigerate or freeze while you make the filling.
Add the raspberries, pomegranate, lemon juice and zest to a saucepan over medium heat. Heat until the mixture comes to a simmer, gently mashing the berries.
Transfer to a blender and blend for 10-15 seconds.
Strain into a bowl through a fine mesh sieve to remove the seeds and zest. Get as much juice out as possible.
Heat the butter in a saucepan over medium heat until melted. Whisk in the sugar, eggs, cornstarch and raspberry/pomegranate puree until completely smooth.
Reduce heat to low and cook, stirring constantly, until thickened (about 12-13 minutes). If the heat is too high, it will cook the eggs.
Pour the curd into the tart crust, then return to fridge until set (about 4 hours). Garnish with fresh berries and mint. Store in refrigerator.

1/3 cup Woodstock Organic Frozen Avocado
ยฝ cup vanilla yogurt (dairy free optional)
ยฝ tsp peppermint extract
1 large handful spinach (optional)
2 tbsp maple syrup
For topping: Woodstock Organic pumpkin seeds and granola
Directions:
Add frozen banana, avocado, yogurt, spinach, peppermint extract and maple syrup to a blender and blend until smooth and creamy.
Pour into a bowl and top with pumpkin seeds and granola.

Wild Blueberry Muffins

Makes: 18 large muffins
Ingredients:
3 large, ripe bananas, mashed (~ 1 ยฝ cups)
2/3 cup greek yogurt (or sour cream)

cup vegetable oil
1 tsp vanilla extract
2 large eggs
ยฝ cup Woodstock Organic Granulated Sugar
ยฝ cup Woodstock Organic Brown Sugar
3 cups all purpose flour
2 tsp baking powder
1 tsp baking soda
ยฝ tsp salt
1 tsp cinnamon
2 cups Woodstock Organic Frozen Wild Blueberries
Coarse sugar for topping (optional)
Directions:
Preheat oven to 375หF.
In a large mixing bowl, mash the bananas with a fork until mostly smooth. (Itโs ok if there are still some lumps). Whisk in the yogurt/sour cream, oil, vanilla extract, eggs and both sugars until smooth.
Stir the flour, baking powder, baking soda, salt and cinnamon directly into the wet mixture. Fold the dry ingredients into the wet ingredients with a spatula until just combined. Gently fold in the blueberries.
Fill muffin tins all the way to the top for large bakery-style muffins, or ยพ of the way for smaller muffins. Optional: top each muffin with a few more blueberries and a sprinkle of coarse sugar.
For large muffins: Bake for 22-24 minutes or until a toothpick inserted into the center comes out clean.
For smaller muffins: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

2 cups Woodstock โ Organic Frozen Chopped Kale
2 cups unsweetened beverage-style coconut milk
1ยฝ cups Woodstock โ Organic Frozen Avocado
1ยฝ cups Woodstock โ Organic Frozen Pineapple Chunks
1 tablespoon honey or agave syrup
Fresh blueberries & dragon fruit
Directions:
1. In a blender combine kale and coconut milk and blend until completely smooth.
2. Add avocado, pineapple, and honey or agave and blend again until smooth.
3. Pour smoothie into bowl and garnish with blueberries and dragon fruit.

Ingredients:
Sauce:
1 bag Woodstock Butternut Squash
1 cup vegetable broth
ยฝ cup oat milk or nondairy heavy cream alternative
ยฝ tsp garlic powder
ยฝ tsp onion powder
1 tsp salt
Pepper to taste
1 tbsp olive oil
1 bag Woodstock Organic Mixed Vegetables
Salt and pepper to taste
1 bag Woodstock Organic Vegan Butternut Squash Ravioli, cooked according to package directions
Vegan parmesan cheese for topping
Directions:
Cook butternut squash according to package directions. Drain and transfer to a blender with broth, milk, garlic powder, onion powder, salt and pepper. Blend until smooth.
Heat a large skillet over medium heat. Add oil, then add mixed vegetables and sautรฉ until warmed through, about 5 minutes.
Meanwhile, cook ravioli according to package directions, drain and set aside.
Add sauce to vegetables and bring to a simmer. Remove from heat and add in ravioli, tossing well to combine. Garnish with vegan parmesan cheese and black pepper.

Melt chocolate. Dip each apple slice into chocolate, then immediately top with desired toppings. Repeat with remaining apples, then refrigerate until chocolate is set, about 10 minutes.

Mango Grilled Chicken

Ingredients:
1 ยฝ lb chicken breast, cut into cubes
1 cup Woodstock Foods Mango Coconut Habanero Sauce
Mango Salsa:
1 mango, diced
ยฝ of a red bell pepper, finely diced
ยผ of a red onion, finely diced
1 small jalapeรฑo, minced
2 tbsp finely chopped cilantro
Juice from 1 lime
ยฝ tsp salt
Directions:
Add chicken and mango coconut habanero sauce to a large bowl and stir to coat. Cover and refrigerate for at least 1 hour, or up to 24 hours.
Preheat grill to medium high. Thread chicken onto skewers. Grill for 5-6 minutes on each side, until the chicken is cooked through.
Add all salsa ingredients to a bowl and stir to combine. Serve with the grilled chicken skewers.
