That time of the year is upon the Lunchbox community....
Remember...Golden rules:Try to pack a balanced lunchbox meal with some protein, fruits🍌🍎, vegetables🥒, carbs and dairy and a bottle of water (even fruit infused works like a charm for kids who aren't fond of still water), milk is also great. Try to only include "Treats" such sweets and sugary edibles on Fridays, then balance the sugar out with a bottle Water instead of juice

Sunday Bakes..... Banana Muffins. Never let over ripe bananas go to waste. I used the Banana bread recipefrom my stories highlights, just excluded the chocolate chips and also sprinkled rolled Oats onto the batter.

The authentic Pasta al pomodoro is said to be an Italian dish that is typically prepared with pasta, fresh tomatoes, basil, and various other fresh ingredients such as garlic. I cheated a bit with the canned tomatoes: such a convenience with all the important ingredients all in one can. This was the most delicious, quickest and flavourful meal to make for
Ingredients:
1 Can Tomato, Basil, Garlic & Origanum
2Tbsp Olive oil
Fresh Basil leaves (handful)
1tsp Sugar
1tsp Paprika
Salt and Pepper to taste
1 Tbsp Onion (chopped)
2tsp Tomato paste
1/3 cup Milk
1/3 cup Pasta water
1/2 cup Parmesan cheese
Method :
Heat olive oil in a large saucepan.
Sauté onions until soft.
Add in the tomato paste and continue to stir.
Stir in the Sugar and Paprika
Empty the canned tomatoes sauce out into the pan.
Add in fresh Basil (chopped)
Season with salt and pepper.
Sauté until soft, about 3-4 minutes.
Pour in the pasta water and milk.
Continue to stir, and in add parmesan cheese.
Reduce the heat to low; simmer uncovered for about 30 minutes, stirring occasionally.
Serve with cooked pasta and garnish with cheese and fresh herbs of choice.
Spring is upon, and I can't wait for the warmer days, flowers blooming, and birds singing🌺. My days of nursing the flu are over, so I can finally enjoy the ability to smell what I'm tasting.
