My sourdough bread recipe:
100 grams of starter (100% rye flour)
450 grams of 100% wholewheat flour
350 grams of water

4 x stretch & folds every half an hour
Four and a half hours of bulk fermentation
Fold one more time and rest in the counter for half an hour
Shape and place in the fridge overnight for proof (around 12 hours)

Hit the oven for 20 minutes, place the bread inside and turn off the oven for 10 minutes. Turn it on again and bake for 50 minutes ⁣⁣⁣⁣⁣⁣
