I’m enjoying this festive season already….the the amazing burst of flavors in this classic appetizer with a twist I name “BEEF CARPACCIO 2.0”
At tonight’s dinner we are surely shaking thing up a bit with our whimsical treat of “Caribbean crab cakes Benedict topped with a rustic avocado slaw +poached egg and a classic hollandaise sauce topped wit tobiko caviar
One of our signature dishes from our multi cultural menu that highlights The haute cuisine of Caribbean flavors ……. Pan roasted Red snapper + Caribbean style duo peas n rice and macaroni terrine +sweet potato purée +pickled cabbage slaw+ roasted root vegetables Bahamian brown stew fish gravy and a fragrant coconut curry sauce
Applying some heat to some Octopus 🐙 for our main course for tonight’s dinner service
Our Guest at Sailrock resort Absolutely loved our Appetizer of char-grilled octopus marinated with a hint of local hot pepper and sour-lime + pickled cabbage slaw + rustic tomato salad + pineapple chutney and calypso sauce
Caribbean lobster Ravioli + Choron sauce with black truffle essence +warm pickled cucumber and carrot slaw with edible flowers 💐 and caviar .com
Char-grilled Octopus + pickled cabbage slaw+pineapple chutney +slow braised tomatoes
Pan roasted Five spice rubbed duck breast paired with orange duck sauce with ginger essence + compressed torched orange segments + braised root vegetables + fragrant cilantro drizzle .com
Seared sesame crusted tuna + pickled cabbage slaw+burnt lemon+ roasted root vegetables + Bahamian boil fish jus with essence of curry
Tonight’s starter: Caribbean spiced lobster croquette + pineapple chutney wig a essence of coconut milk + Avocado&tomato salad with shaved cucumbers drizzled with a cilantro, goat pepper-sour lime dressing
Citrus poached shrimp 🍤 salad + tomato confit + Goat cheese + pickled melon and micro

With so much going on I find it hard not to be GRATEFUL ........the photos are all some my work as private Chef from the onset of this Global Pandemic........but can I tell you The GOD I serve is a Keeper,he has blessed my hands to work ........I must say thank you to my ALBANY FAMILY THEY MADE SURE I HAD WORK 🇧🇸❤️❤️
