Today’s Father’s Day sandwiches are filled with heartiness and taste like a warm hug. Just like a wonderful dad hug. 🤗 Roast beef on Italian with garlic, olive oil, basils, and pine nuts pesto. Garlic ailoli, pickles peppers and dill pickles sliced thin. Sliced tomatoes, provolone and lettuce served in a beefy loaf of Italian bread. Enjoy.

Another day, another quick lunch. Summer lunches are light and easy just as it should be. I made chicken salad. Use rotisserie, braised or canned. Packed it with more protein using garbanzo beans and half Greek yogurt, half mayonnaise. Dont forget the lemon juice, a little mustard, chopped green onions and celery. Season with what you like and serve on greens like I have or in a brioche bun. I like to put a dash of hot sauce on mine sometimes. Enjoy in good health.
Sandwich for lunch. Bread is sourdough with pesto and mayo on either side. Filled with dressed arugula, provolone or sharp cheddar cheese, peppers, tomatoes and your favorite deli meat. Nice summer day bite. Great for lunch on the run. Enjoy.

Ribeye stir fry for dinner. Prepare the ribeye first and set aside to rest. I like mine medium well. While it’s resting stir fry the chopped veggies in the same pan and after the meat rests, slice and incorporate back in the pan along with the now cooked veggies. Add your favorite sauce and serve over rice. Truly a 30 min meal including the rice cooking time. Easy and delicious. Enjoy.

This beautiful dish is called Abgoosht. It’s centuries old Iranian comfort food made of lamb or beef along with potatoes, garbanzo beans, tomatoes, dehydrated lime and saffron. It’s a perfect cold weather dish. But I often crave its goodness like today. The ingredients are sometimes mashed together to create the most delicious meat pâté. Served with Lavash or Barbary bread. I like to tear my bread into pieces and let it soak up all that wonderful soupy sauce. Bon appetit and Noushe joon.

Another day and another chicken dinner idea. Prepared in Mexican fashion with lots of chili powder, cumin, oregano and marinated in shallots and lime juice with olive oil. Pan cooked and serve over cooked beans and rice. Life is good. Live it tastefully.
This beautiful dinner was prepared in less than 20 mins. Well I did marinade the chicken this morning and then it was ready to pan sear. Then I did the chopped veggies and voila. Marinade the chicken in crushed garlic, lemon juice, paprika, olive oil and strained yogurt. Season while pan searing. Serve with your favorite sautéed veggies and enjoy in good health.
A little gathering to watch the eclipse with friends. A few hours of anticipation and celebration filled with food, fun and familiar chatter. Oh there were a few tears shed as well. Watching the universe in action was emotional y’all.

Roasted beets so red they’re purple. Made a beets and jicama salad. Dressed in aged balsamic and crumbled feta (optional). Good to the last drop. 😋
Fresh beets ready to be cleaned and baked. Ill serve them 3 way for three meals. Mixed in yogurt, in a salad and last but not least in soup along with leeks and scallions.
Heirloom tomatoes and English cucumbers salad with red onions, crumbled feta and fresh mint. Cracked pepper, kosher salt and lemon Dijon vinaigrette. Enjoy. 😊

Mediterranean comfort food. Well one of many of course. But let’s call it Paella for tonight. Saffron shrimp and prawns paella.

Throw your chopped peppers, onions and shallots along with garlic in a hot pan and sauté. Next add diced sausage ( andouille is great), shrimp and prawns in the pan with seasoning. Cook until color changes and seafood is cooked. Just a few minutes will do. Remove the shrimp and prawns when cooked and set aside.
Add more seasoning, paprika, chilli flakes, and ground saffron. Add your pre-washed starchy short grain rice. Stir then add broth and cook on low simmer until cooked (15-20 mins). Make sure you stir and add more broth as needed. Mix in some pease towards the end and finally add your chopped herb (oregano and parsley) and then add your cooked and seasoned seafood on top. Garnish with more fresh herbs and add some lemon juice if you desire. ~Eat in good health. ❣️
Yummy side dish perfect anytime. Brunch, lunch or dinner. Sweet potatoes and fingerling potatoes diced and dressed in olive oil, cracked pepper, kosher salt and paprika. Pan fried in a cast iron skillet along with chopped onions. Served with cherry tomatoes and garnished with your favorite herbs. A perfect pair with any main course. Specially fish. Felt like pasta. But I’m watching the carbs so I doubled the meat in the sauce. To balance it out. Every shell was filled with the goodness of that tomato meat sauce and I enjoyed the meal guilt free. After all protein is an important part of a balanced diet.

Sauce Recipe:

Sauté chopped shallots and onions along with chopped carrots until golden. Separately brown your ground beef and season. Add the carrots and onions mixture along with some chopped garlic and brown some more. Season some more and add tomato paste. Next add tomato sauce and a splash of lime juice, some chili flakes and cover for a quick simmer. Add to your desired pasta and enjoy this fast and healthy meal.
My lux platter. Smoked salmon, buffalo Mozzarella and capers, sliced tomatoes, avocados and onions. Drizzled extra virgin olive oil and lots of love. Dont forget the salt. Serve as is or with naan, bagels or make a wrap. Too good.
Banana oat cookies, tea, and fruit. Perfect anytime. The cookies are made of ripe bananas, oats, crushed nuts and chopped dates. Combined with cinnamon, a dash of salt and one cracked egg to bind. Bake in the oven for 30 mins and enjoy. All served on my grandmother’s china. ❤️

Pickles are an essential component of my diet and are a huge part of Persian cuisine. They’re great for your gut health and help support a healthy diet and a healthy body. Try pickling at home. Takes very little time and effort and needs few ingredients. At a minimum you need vinegar, water, salt, peppercorns, garlic cloves, sugar, and your favorite vegetables. I used sliced red onions and Persian cucumbers. They will last for months in the fridge but they only last about two weeks in my fridge. Enjoy 😊

Make this Red bell pepper dolmeh for dinner tonight. This persian recipe lives in my head along with a ton of great childhood memories at my aunts house and playing with my cousins in Iran when we were kids. She made the best Dolmeh’s.

Prepare your filling by par-cooking some rice (1 cup). Drain it before its fully cooks. Set aside and start browning chopped herbs (I used mint, parsley and chives). Separately brown your minced meat (1.5 pounds) with chopped onions and garlic. Once browned, add seasoning ( turmeric, salt and pepper). Combine herbs and meat mixture and add chopped tomatoes. Also add two tablespoons of tomato paste. Combine and let it all simmer to incorporate. Lastly take your meat mixture and combine with the par-cooked rice. Then scoop into your de-seeded bell peppers and place in the preheated oven on a cooking sheet or casserole dish. Cover with foil and roast on 400 for 30 mins. Uncover and roast for another 10-15. I love it with a side of cool cucumber yogurt and in good company. Nooshe Jan. 🤗

Moroccan style roasted chicken. The seasoning rub elevates this roast. Paprika, cinnamon, cloves, brown sugar, ginger, cumin, salt, pepper and cayenne. Skin on and heavy on the rub. Drizzle olive oil and roast uncovered along with onions and make sure to baste. 1.5 hours on 375 degrees. Fingers licking good.
Sundays are beautiful. Sundays are layered. A day to reflect, a day to unwind, a day to plan ahead. A day to turn 6 eggs into an omelette topped with tomatoes, chiffonade basil leaves, crumbled goat cheese and prosciutto.
What started off as chicken fajitas with Anaheim peppers, evolved to an Asian stir fry finished with oyster sauce, soy, ginger, fish sauce and honey. When cooking I sometimes detour hallways through 😂 I didn’t have tortillas or tomatoes for salsa so I had to pivot to an Asian dish served with white rice. The good news is the taco seasoning and the Anaheim peppers worked out great and added a fantastic flavor which made the dish more Sichuan spicy. Recipe below.

Season your sliced chicken breast pieces with cumin, paprika, chilli powder garlic powder, dried oregano, kosher salt, black pepper, and crushed red pepper or a packet of taco seasoning. Start sautéing in a hot and oiled pan. Once the meat is browned add the sliced peppers and onions. When the veggies are cooked add sauce. A mixture of oyster sauce, soy sauce, fish sauce, grated ginger and honey. You can use a premade teriyaki sauce as well. Sauté on high heat white stirring. The holidays are upon us and so is my turkey barely soup or as we call it in Iran Ash-e-Jow. Every region and household has a different recipe. Some add tomato paste and much more herbs. I made it this time in the halim version. It’s savory and cinnamon forward. Give it a try. 🥣 it will warm your heart.

Recipe:

Heat some olive oil in a large pot over medium heat and saute chopped onions until translucent. Add your rinsed pearl barley ( I had a cup for this recipe) to the pot and stir along with the onions. Season with salt, pepper, turmeric, and cinnamon. Add shredded previously cooked turkey breast. I always save the turkey breast from Thanksgiving in the freezer to use for this soup in the future. Add water or chicken stock, the juice of a lime, and bit more of the seasoning. Bring the mixture to a boil, reduce heat to low, and simmer for 1 hour. The soup will start to thicken as the barley cooks through. Add finely diced or shredded carrots and a pinch of dried mint(optional). If the soup is too thick, add 1/2 cup of hot water to get your desired consistency. Dont over dilute. Use a hand blender once done to smooth the texture. Enjoy 😊
