—SOURDOUGH DISCARD BAGELS—

RECIPE
Ingredients:
-100g sourdough discard + a pinch of yeast (for quick rising)
-500g bread flour
-250g water
-30g sugar
-10g salt
-Toppings of choice (I used Parmesan, Everything But the Bagel seasoning, and sesame seeds here.)
-Optional: 1 tbsp honey for boiling bagels to get a brown finish

Instructions:
1. Add water, starter, yeast, and sugar to bowl of stand mixer. Mix until roughly combined.
2. Add the flour and salt. Mix on low speed until they are incorporated. Once incorporated, turn the speed up to medium for a few minutes then back to low for about 10 minutes or until dough is smooth and elastic.
3. Cover bowl and let the dough rise for 1-2 hours or until it has doubled in size.
4. Separate the dough into 10 equal parts (or 12 for smaller bagels) and roll them into balls with your hands. Next, use your thumb to create a hole in the center and stretch/shape the dough slightly until they take the shape of bagels.
5. Cover the bagels and let them rise while you begin to boil a large pot of water (add honey now if using). Preheat oven to 400°F.
6. Once water is boiling, carefully lower a couple of bagels at a time into the pot using a skimmer spoon, slotted spoon, or spider strainer. Take them out with the same spoon after ~30 seconds. Place them onto a greased or parchment lined baking sheet.
7. Add toppings and bake for 20-25 minutes.

As with any sourdough recipe, let them cool completely before enjoying. (Does anyone actually do this…? Lol)

Inspired by , this is one of my favorite easy, nutritious options for lunch or dinner. Big perk: every ingredient can be prepared ahead of time. The options are endless for these bowls. Feel free to omit whatever you’d like, and let me know what you add to make it your own!

—MEDITERRANEAN BOWL—

RECIPE
Ingredients:
-Basmati rice (1 cup)
-Diced chicken breasts (~1.5 pounds)
-Toppings: 1 box of mixed greens, pickled onions, 1 pint of cherry tomatoes, 1 cucumber (or 1 bag of mini cucumbers), hummus, tzatziki, feta cheese crumbles, and fresh herbs (dill)

Instructions:
-Cook rice according to package instructions. Use broth instead of water for a richer taste.
-Season chicken to preference. I sprinkled salt, pepper, garlic powder, paprika, and cumin on both sides for this recipe.
-Cook chicken for 3-5 minutes on each side over medium-high heat or until no longer pink. I like to use a cast-iron skillet to get a slight char.
-Halve tomatoes, dice cucumber, and place them in a bowl. Drizzle olive oil, add salt and pepper to taste, and stir to combine.
-Assemble your bowl — place rice in the bottom and add chicken + all toppings listed above.
-Top with fresh herbs.
-Stir it all together and enjoy the goodness!

Serves 4

Side notes:
*Rice + chicken quantities can be fluctuated to accommodate your serving size.
*I find my local grocery store doesn’t always have tzatziki, so I’ve started making it (and the hummus & pickled onions) at home! They’re all super easy. Message me if you want the recipes for those.
*Various base options instead of basmati rice: lentils, cauliflower rice, shredded cabbage
*Add-in ideas not included here: banana peppers, falafel, roasted veggies, meatballs
*Other fresh herbs I usually add that aren’t pictured here: cilantro, green onion

Last, but certainly not least, the name is a double entendre for focaccia — one of the greatest breads of all time.
