Eggless Chocochip Cake
Namak pare/ खारे शंकरपाळे
Ingredients-
1. 3 cups maida (all purpose flour)
2. 1/2 cup hot oil
3. 1 sp salt
4. 1 sp ajwain
5. 1 sp kalaunji
6. Oil for deep frying
7. Water for kneading
Recipe-
1. Add hot oil, salt, ajwain, kalaunji to maida. Mix well. Add water & knead a semi soft dough. Cover with wet cloth & let it rest for at least 30 minutes.
2. Now make equal sized balls. Roll it like a chapati and cut in desired shape.
3. Heat oil in a pan. Deep fry all Shankarpale over slow-medium flame till they turn light golden brown. Place the fried ones on a tissue paper & let them cool down, put the same in air tight container.
4. Namak pare/ khare Shankarpale are ready. Enjoy!
Sugarcoated Shakkarpare/ पाकातले शंकरपाळे / खुरमा
Ingredients-
1. 3 cups maida (all purpose flour)
2. 2/3 cup ghee
3. 1/5 tsp salt
4. Refined Oil / Ghee for deep frying
5. Water for kneading
6. 2.5 cup sugar & 3/4 cup water to make sugar syrup
Recipe-
1. Sift together maida, salt in a bowl. Add ghee to this mixture. Mix well. Add water & knead a semi soft dough. Cover with wet cloth & let it rest for at least 30 minutes.
2. Now make equal sized balls. Roll it like a thick chapati and cut in square shape using a knife.
3. Heat oil/ghee in a pan. Deep fry all the shakkarpare over slow-medium flame till they turn light golden brown. Place these fried shakkarpare on a tissue paper.
4. Prepare sugar syrup of 2 strings consistency ( I have used organic sugar, that’s why brown color). Add fried shakkarpare to this syrup. Mix gently until it forms hard coating of sugar.
5. Shakkarpare are ready. Enjoy!
Choco chips Vanilla Sponge Cake (Eggless)
Ingredients-
1. All purpose flour 1.5 cup
2. Powdered Sugar 1 cup
3. Baking powder 1.25 tsp
4. Refined oil 1/4 cup & butter 1 tbsp
5. Milk 1 cup
6. Vanilla essence 1tsp
7. Handful of choco chips ( dusted with flour)
8. 1 sp lemon juice
Recipe-
1. Preheat the cooker with a layer of salt inside it for 15 minutes.
2. Sieve the dry ingredients in a bowl.
3. Mix all wet ingredients well including lemon juice. Everything should be at room temperature.
4. Add dry mixture to wet mixture. Mix well. Add in choco-chips too.
5. Grease cake tin, dust with some flour. Pour cake batter in it. Top it up with some more choco chips.
6. Place a trivet on salt layer in cooker. Put cake tin on it, cover with lid ( without gasket & whistle) and bake for 30-40 minutes.
7. Check with a toothpick if it's done. Take out the tin, let it cool down. Make slices and enjoy!!
