Kaboom baby! I'm going to tell you the best way to can make pizza in your Outdoor Oven: ⁠
Place the wood all the way to the back of the oven, even stand it up against the back wall. This way the fire goes up and over the pizza creating massive top heat. Use small logs so you can have a steady heat by adding a small log every time you think the oven is getting a little less hot. With this technique, your pizza will be finished fast! so you will have to be focused on the oven and turn the pizza around a couple of times. ⁠
If you want a bit more of a relaxed baking session don't stand the wood up against the backplate and have your pizza ready in 6/7 min instead of 1/2 enjoy have fun and let me know if you have any questions.⁠

Mmmmelanzane! As you already know I love the Italian kitchen ;) But next to pizza I have another big favorite... Yes, melazane. And this pizza has both of the best worlds. A super fluffy Canotto pizza, topped with rich tomato sauce, grilled eggplant, lots of parmigiana, and fresh basil! Mamma mia yum 😍⁠

Oh yes! One of my favorites over here, Italian sausage and pea puree. I already hear you thinking, but Pieter you say this to every pizza you show us. And to be honest with you, it's true. Garlic, a true cooking hero and indispensable in a lot of kitchens around the world. Spicy, full of umami and it smells delicious when you fry it. My favourite way to eat garlic is when it's roasted in its own skin. Put a whole bowl of garlic in the fire and after 15 minutes it will transform into a soft and sweet treat. Delicious on bread, in a sauce, or eat it like its a candy ;) Yum! 😋⁠

Often I got the question if you need to clean the pizza stone and how to do that. By firing up the oven, all the bacteria will be killed by the heat, so you should not worry about that. Cleaning your pizza stone is only necessary when it's dirty. After you had a broken pizza, or when you spilled some toppings on the stone for example. If you don't clean those food leftovers, they will burn and stick to the next pizza you will bake. Clean the oven with a metal brush or a spatula, ideally one on a long stick, so you don't burn your hands ;). If you don't have one, be creative and build something yourself. Give it a good brush, take out all the bits, and you're ready for your next pizza! ⁠

Oh Yes! I can't wait till my little wheat babies are growing again. Well, first things first. Last month I started with preparing the soil for the PizzaFarm 2.0. Last year I came quite far, but after serval months the wheat stopped growing and started to die. Farming in the middle of the city center of Rotterdam can be challenging ;) I was too optimistic about the amount of m2 spaces and I found out that the soil had a lack of nutrients. So this time I'm going to do it slightly different:⁠
1. Lower the amount of m2 spaces.⁠
2. Using better and more soil.⁠
3. Adding a lot more love ⁠

Oh yeah, twist and bake 🔥 You won't be the first one who will burn his pizza inside the outdoor oven. The oven can reach a temperature over 400 degrees Celcius. So you can imagine how fast it can go ;) To prevent your pizza from burning you put your peel underneath the pizza, slide it halfway out, and give it a twist. Put it back in and bake. Repeat this a few time and your pizza will be ready before you know ;) ✌️ ⁠⁠⁠⁠

Before you put your pizza in the oven, it's crucial to warm the oven up. Make your fire at least 30 minutes before you start baking. This way both pizza stones will warm up and release this heat during the bake. This will give you a perfectly baked pizza, crispy bottom, and a beautiful charted top 🔥⁠⁠⁠⁠
