Another exciting Nutella recipe , these are nutella brownies which might not be as rich and chocolatey as the previous brownie recipe I shared but if you want some quick brownies with limited ingredients then this might do the job.
Servings: 6 brownies
Prep Time 10 mins
Cook Time 20 mins
Total Time 30 mins
Ingredients
1 cup (8oz/240g) Nutella
2 eggs
10 tablespoons gluten free flour
Instructions
Put the Nutella, eggs and flour in a large bowl and mix until all ingredients are combines. The batter should be thick and shiny.
Line a 2 inch deep 8 x 12 in the baking tray with parchment paper. Pour the batter into your tray. Bake at 350F (175C) for 20-25 minutes at a conventional setting in your oven. Monitor the bake if you are using a fan assisted oven, or an OTG. These will bake faster.
Remove from the oven and allow to cool fully before slicing. Enjoy!

Gluten free samosa sheets recipe number 2
2 cup all purpose GF flour(1 to 1 GF flour)
1.5 teaspoon salt
1.5 teaspoon ajwain seeds or carum seeds
1/4 cup ghee
3/4 cup Ice cold water
Slowly add ice cold water to dry ingredients to make a stiff dough ball

Tips for making dairy free yogurt taste like regular:
*Add lemon (lots of it till it is as tangy as regular yogurt)
*Add crushed garlic and blend with yogurt to infuse it completely
*use chat masala and salt sparingly.
Coconut yogurt (plain flavour) by Riviera is a God sent!! Alhumdulillah
I used this recipe but as is I found it very crumbly and extremely difficult to knead into dough balls.
So I added arrowroot starch 1/2-1 cup and voila it was great. I still had to use parchment paper to help roll it flat but it wasn’t crazy difficult.
And yes it has yeast, and eggs and yogurt but I believe a small amount of yeast will do in a big batch. I used dairy free coconut yogurt and for eggs you can try substituting with flax eggs ( texture wise it’ll be the same).
Frying in ghee makes it even more delicious.

Blueberry muffins.
What started as an attempt to save some organic blueberries from going bad, turned into berry compote which turned into these muffins. Alhumdulillah!
Gluten-free Poori! Looks like poori, Tastes like poori, reheats better than poori. Makes all your Chana, halwa poori dreams come true! Alhumdulillah
Same recipe as gluten free samosas (posted earlier with slight variation here- both work equally well) except afterwards you just deep fry it!
2 cups arrowroot flour
1/2 cup almond flour
1 can coconut milk
1/2 packet of coconut cream (the solid kind)
2 eggs
And dairy free milk to thin the liquid if needed.
Salt, cumin powder and black pepper to taste.
I just blend everything together in a spouted flask as it’s easy to pour in the pan. Slightly fry each side and deep fry next.
Since being gluten-free the hardest thing for me to give up was samosas. And voila, my incompetent hands made these delicious gluten-free/paleo samosas from scratch yesterday. Alhamdulilah. Thanks to HolisticMom, MD for the fantastic recipe!
