It was a super busy weekend😵‍💫! Finally getting to post these delicious treats I made for a coworker’s son’s birthday party🥳🎈🧁. These two flavors truly are some of my faves: chocolate Oreo and vanilla chocolate chip with cookie dough frosting🤤. Just made another round of the Oreo ones tonight for our staff meeting. Love sharing these treats😍.

What do normal people do if they wake up at 4am? Try really hard to get back to sleep. Me? I ponder the vegan pumpkin spice latte cake recipe I’ve wanted to make and bake it into cupcakes instead. Oh and I made them gluten free, too. Definitely a small but solid pumpkin-y treat. The coffee frosting is subtle but a sweet compliment to the pumpkin spice and cinnamon in the cake😋. Perfect for sharing at work tomorrow for our back to school meeting🧁🎃☕️📝.

It’s been a long summer. A long year! My spare baking time has been quite limited. I’d like to get back to it more this Fall. A friend sent me a cute flower tutorial video and inspired these. I bought new flower petal tips but realize my frosting texture is NOT the right one for the delicate petals I want to make. So… I’ll try them again soon. In the meantime, these yummy treats are headed to work with Joe as a request from one of his coworkers. I’ve made cupcakes for their Christmas luncheons and well… he remembered. Maybe I’ll even start sending them in monthly if I can stay on my game😋👩🏻‍🍳🧁.

Happy Summer!! Nothing says summer more than strawberries🍓🧁. I cored these vanilla cupcakes to nestle in a dollop of strawberry jam then popped a slice of the top back on. The frosting is a blend of vanilla and fresh strawberry buttercreams. Topped with a little sprinkle of sanding sugar and they’re ready for an 80th birthday celebration today🎉🎁🙂.

He went through all the pix I have on here and picked these oldies but goodies for his party today. First in the lineup is funfetti- pure party in a cupcake. 2nd is chocolate Oreo- an Oreo nestled in the bottom of the chocolate cake with vanilla frosting and tons of Oreo bits blended in. And last…. the cookie dough frosted cupcake. I could eat the leftover frosting for days🤤. It’s sitting on a vanilla chocolate chip cupcake. A dozen of each- it was so fun recreating these guys🧁🍰🍪🎉.

It’s hard to get a good pic of teeny little cupcakes. Made a batch of mini St Patrick’s Day chocolate cupcakes for my mini friends yesterday😍☘️🧁. They loved the green and gold sprinkles✨. And made a few full sized ones with the leftover batter for the teachers to share. No Guinness cupcakes this year since all my friends are pint sized these days😚.

Teaching full time has taken away a bit of my spare baking exploration time. Ok, actually a lot. But I LOVE teaching🥰🥰.

Today is President’s Day and I had the day off to… BAKE👩🏻‍🍳! So, yes, I’m still here loving making cupcakes and happy to make you a batch for your special occasion. These pink beauties are full of cherries! Maraschino cherries diced into the cake and cherry juice adding flavor to this solid cream cheese butter cream frosting🧁🍒💕. They’re super delish and ready to send out the door to everyone’s workplace so we don’t eat them all😁.

Life has been extra busy and the baking has had to slow down a little. But my husband’s Christmas party is today and some of his coworkers remembered my treats from years past and asked if he’d be bringing them... So off to work he went with 3 dozen holiday treats🧁🧑🏻‍🎄🎄.

It’s been a minute. But I am super excited to make a delish batch of Oreo cupcakes! Forgot to take a cut in pic, a little rusty, but there’s an Oreo on the bottom, Oreo bits floating in the chocolate cake, Oreos blended into the vanilla frosting, and topped with a mini Oreo for cuteness🥰. Happy birthday Gianna🧁🥳!

Carl recently discovered he likes bananas🍌.
So I made a batch of banana cupcakes topped with cream cheese frosting and a salted caramel drizzle🤤. Well, it was probably his owner who really likes that flavor😘 but…

Did I mention Carl is a horse at my daughter’s barn😃🐴💋?!!! I love that they asked me to make his birthday treat. And that he loves sweets😍!

Bringing back a holiday fave for St. Patrick’s Day.
Shamrock Shake cupcakes☘️🧁🥳. Minty fluffy cake topped with an airy frosting made of whipped cream and some white chocolate pudding for a hint of flavor🤤. Always nice to drop in with a container of treats for my work fam and walk back out 30 minutes later with it empty👏🏻🌺.

She’s all about the Frozen theme so I went with all the colors, swirls, and sprinkles I could imagine that gave that vibe💖❄️✨👑.

Double chocolate, vanilla funfetti cake with vanilla frosting, and vanilla cupcakes with cookie dough frosting🧁🤤. Pretty thankful there was some leftover cookie dough frosting because it was amazing- my house taste testers all approved😁.

It’s been a minute but I finally had some time to whip up these tasty Fall themed vegan treats. Pumpkin cupcakes with maple buttercream and a sprinkle of candied pecans. The maple frosting is probably one of the most delicious I’ve ever made🍁🧁🤤.

These colorful vegan vanilla cupcakes were a special request for a local mom’s special day.
I L♥️🤍💗💚VE how the swirls vary with each cupcake as I turn the piping bag. I sure hope this busy mom had a fabulous Chinese food dinner and enjoyed these cupcakes for dessert with her fam… (and that they did the dishes as her birthday gift🎁😍.)
