An adjective far from chosen at random considering the seductive aromatic profile it promises: honey, dried apricot, anise, salinity... This lively and complex champagne was unveiled at the heart of 𝑴𝒐𝒏𝒊𝒒𝒖𝒆 𝑻𝒆𝒍𝒍𝒐's gallery. The Assemblage 2015 cuvée from Bruno Paillard is made from grapes sourced from Grand and Premier Crus of Champagne. The label, illustrated by painter and draughtsman Gérard Titus-Carmel on the theme "Élan", reflects the ample and energetic style of this vintage. The result is a champagne of remarkable generosity, punctuated by notes of wild strawberry, blackberry, blackcurrant, liquorice, fig, with a smoky nose and superb chalky density. Finally, let's end with the flagship of the House of Bruno Paillard: the N.P.U. cuvée, which stands for "Nec Plus Ultra". Produced in very limited quantities with numbered bottles, the NPU 2009 is entirely vinified in wood and undergoes a long ageing process of 12 years in the cellar followed by 18 months of rest after disgorgement.
