Again let me appologize for not posting in almost a year. I've been DJing a lot and Quarter Inch Seams and I have putting a lot of effort into running a restaurant!!! But we get the chance to sneak out now and then! Sunday we went to the Canteen Restaurant for breakfast and we were pleasntly surprised! I ordered the , Jen had the our son had the . Our daughter had the pancakes but dove right in before I could get a shot. We got a flight of BBQ sauce to try and use for our breakfast... the was a favorite. Good Food, Good Coffee, 4.5 out of 5

As a chef, this is a pet peeve of mine. I hate contemporary kid's menus! Before the 1980s a child's menu merely meant a smaller portion of whatever was on the menu, but presented in a kid friendly, fun way. The names on this menu are adorable! Notice you don't see any offering of chickens nuggets or pizza! Its actual whole meals!
This may not be a popular opinion but, I truly believe that the modern kid's meal has ruined the American child's palate.
I cannot tell you how many clients I cook for and their children will not eat ANYTHING but nuggets and pizza! I'm not exaggerating.
Parents, please I beg you, don't feed your little ones these over processed, addicting fast food types of meals ...or don't do it routinely. Nuggets and pizza, etc. should be treats, not a dietary mainstay.
Children need to be slowly introduced to different foods, flavors, and textures. Don't be discouraged if your child turns something down the first few times. The biggest thing you can do to encourage healthy eating habits that include a variety of foods is to be an example. Eat dinner together as a family. Make food fun.

Pickling some ginger for my amazing wife! We both live it with our sushi and I want to use it for salads... We're weird I know. What else do you use it for?
Tonight made a celebration dinner with the kids... Szechuan chicken and fried rice! Got some fresh ginger and grated it and mixed it in with some freshly chopped garlic red wine vinegar brown sugar rice vinegar, chili sauce, soy sauce, and a slurry for thickening. Diced up the chicken and heated up the wok until it was screaming hot. Then I cooked the chicken until it had a mild Browning to it. Then I added in the sauce and let it cook down a little bit until it started to really boil and then added in the slurry to thicken. After it had reduced enough and thickened up to the level that I wanted it to I added some sesame seeds. For the fried rice we made some jasmine rice tossed in some frozen corn and carrots and chopped up two onions. And of course we can't forget the eggs! And in some soy sauce and a little bit of rice vinegar and we were on our way!

First time ever making true carne asada!!!the skirt steak is marinating right now while I roast some tomatoes, garlic,onion and jalapeno for some salsa! Can't wait!

My grill tonight! Ribs rubbed with yellow mustard, kosher salt, pepper, roasted garlic powder, and onion powder. After it's been cooked on direct heat, I move it to indirect heat to finish it. But while it's indirect cooking I top it with maple molasses seasoning. It's so good!!! The wings are tossed with baking powder, salt pepper, garlic powder and brown sugar. After a and a toss the go on the grill with no further saucing or seasoning.
Loaded grill night!!! Wings and Ribs! I dry rubbed the meat with some new blend ideas... I'll post blends on next post. Add in some macaroni salad and some pickles (buy these at worth it!!!) I put some on my wings for a little heat. This was a perfect Sunday meal!!!
Tried a new tonight with . It was the flavor and holy crap I was not expecting it to be so spicy! I loved it! Looking forward to trying more of the flavors! What should I try next?
Ok let's talk about . For starters... I am not a fan. I have not had a burger that I like... Until yesterday. I ordered the trillionaire burger with the truffle fries and truffle aoili. Holy shirt and pants.... This was so good. There was cheese and portabella mushrooms and so much more. I actually ate 3 orders if the fries and aioli. I wanted to lick the tub the aioli came in. This was one of the best burgers I've had. I'm surprised bc red Robin usually lets me down. Not this time. Order one before they go away!
Went to Golden Market while my daughter was at running practice and I found this K Stew by Nongshim America] so I got a pack of 4 to try. Holy Moses was it good! The noodles were perfect and I like the addition of the chili beans to drop in some sneaky heat! I cooked these straight up for the first pack and now I'll experiment a little more on next batch. Please give me some ideas! Nongshim America] you have a new fan!!!
Got to sneak out with the live of my life on for some amazing Mexican food! I started out with an Horchata margarita that was bloody fantastic! I ordered the chicken flautas with rice and beans and was not disappointed in any way! The flautas we're perfectly fried and topped with lettuce, crema, pico de Gallo, and guac. I think I did a happy dance in my chair after the first bite! My wife ordered the smothered steak burrito and it smelled so good. She enjoyed all of it with her . Such a great lunch and a great excuse to have a day date!
My 12 year old was wondering what jambalaya was since watching an episode of . So what does any parent do? I had him help me make it. He was in charge of chopping the celery, peppers and sausage. Also! This is a little nontraditional as we have some sensitive pallets in the house. We swapped out smoked sausage for the andouille and chicken thighs for the shrimp. First we browned the chicken thighs and give them a rough chop. Then we added some oil, our onions celery bell pepper and five cloves of garlic confit and let that start to sweat and get real happy in the pan. Then we tossed back in our chicken and sausage and let everything brown up. Then deglaze the pan with some Sauvignon Blanc just to break the up from the bottom of the pan. Added two cans of fire roasted tomatoes, our cajon seasoning, rice and chicken stock. Let that cimarron low for about 20 minutes and it was damn near perfect!. In our cast iron pan, we melted down some of our newly made honey butter and added in some shrimp for those in the house that likes shrimp. Let the butter turn into a light caramel and toss over the shrimp and you had a really awesome meal!

Tonights dinner is meant for comfort. First I sauteed two packs of sliced Italian sausage in olive oil. While it was cooking I added in 2 diced onions and 2 heads of freshly roasted garlic. After sprinkling in some dried basil and oregano, the dried pasta when in. Add in a box of chicken stock and cook til pasta is done. Stir in some shredded parmesan cheese and enjoy with some crusty bread!
Chocolate chip strawberry pancakes with a lovely side of bacon! This place may be our new breakfast go to when we're at the park. The prices aren't Disney expensive and you can get to it by monorail because it is on the main floor of the contemporary. Really highly recommended!
Walt's prime rib hash! of roast beef, potatoes, and onion with a fried egg nestled on top to make it just the way Walt would have it as lore states. The egg yolk was perfectly runny covering the hash very nicely. The only thing is that I wish they used a straight prime rib instead of the Asian prime rib that you can get at Kona Cafe because at sometimes the Asian flavors were a little over noticeable. But I absolutely loved this!
