Creamy Chicken Marsala

Ingredients:
• 4 boneless, skinless chicken breasts
• Salt and pepper to taste
• 1/2 cup all-purpose flour, for dredging
• 4 tablespoons olive oil
• 1 large shallot, finely chopped
• 2 garlic cloves, minced
• 8 ounces mushrooms, sliced
• 1 cup Marsala wine
• 1 cup chicken stock
• 1/2 cup heavy cream
• 2 tablespoons unsalted butter
• 1/4 cup chopped fresh parsley
Directions:
1. Season chicken with salt and pepper, then dredge in flour, shaking off excess.
2. In a large skillet, heat 2 tablespoons olive oil over medium-high heat. Add chicken and cook until golden on both sides, about 3-4 minutes per side. Remove chicken and set aside.
3. In the same skillet, add the remaining olive oil. Add shallot and garlic, and sauté until fragrant. Add mushrooms and cook until they are browned and their moisture has evaporated.
4. Pour in Marsala wine and bring to a boil, scraping to remove any browned bits from the bottom of the pan.
5. Add chicken stock and simmer for a few minutes to reduce the sauce slightly.
6. Return chicken to the skillet and simmer for about 10 minutes.
7. Stir in heavy cream and butter and cook until the sauce thickens, about 2-3 minutes. Garnish with parsley before serving.

Bacon Ranch Cheese Chicken

Ingredients:
• 4 boneless, skinless chicken breasts
• 1 tablespoon olive oil
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• Salt and pepper to taste
• 8 strips of bacon, cooked and crumbled
• 1 cup ranch dressing
• 1 cup shredded cheddar cheese
• 1/2 cup grated Parmesan cheese
• Fresh parsley for garnish
Directions:
1. Preheat oven to 375°F (190°C).
2. In a large skillet, heat olive oil over medium heat.
3. Season chicken breasts with garlic powder, onion powder, salt, and pepper.
4. Place chicken in the skillet and cook until golden on each side, about 5-6 minutes per side.
5. Transfer the chicken to a baking dish.
6. In a bowl, mix ranch dressing, cheddar cheese, and Parmesan cheese.

Ingredients:
• 1 medium butternut squash, peeled and cubed
• 2 tablespoons olive oil
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• 1 cup Arborio rice
• 1/2 cup dry white wine
• 4 cups vegetable broth, kept warm
• 1/2 cup Parmesan cheese, grated
• Salt and pepper to taste
• Fresh parsley, chopped for garnish
Directions:
1. Preheat your oven to 400°F (200°C). Toss the butternut squash cubes with a tablespoon of olive oil and spread them out on a baking sheet. Roast until tender and slightly caramelized, about 25-30 minutes.
2. In a large pan, heat the remaining olive oil over medium heat. Add the onion and garlic, and sauté until translucent and fragrant.
3. Stir in the Arborio rice and cook for 2 minutes to lightly toast the grains.

Ingredients:
• 12 lasagna noodles
• 2 tablespoons olive oil
• 1 onion, chopped
• 2 cloves garlic, minced
• 1 pound ground beef
• 1 (28-ounce) can crushed tomatoes
• 1 (6-ounce) can tomato paste
• 2 tablespoons fresh basil, chopped
• 1 tablespoon oregano
• Salt and pepper to taste
• 2 cups ricotta cheese
• 1 egg, beaten
• 3 cups mozzarella cheese, shredded
• 1 cup Parmesan cheese, grated
Directions:
1. Preheat your oven to 375°F (190°C).
2. Cook lasagna noodles according to package instructions, then drain and set aside.
3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, cooking until translucent.

Simple Mediterranean Tuna Salad

Ingredients:
• 2 cans of tuna in olive oil, drained
• 1 large cucumber, diced
• 1 red onion, finely chopped
• 2 ripe tomatoes, diced
• 1/2 cup Kalamata olives, pitted and halved
• 1/4 cup feta cheese, crumbled
• 1/4 cup fresh parsley, chopped
• 3 tablespoons extra virgin olive oil
• 1 tablespoon red wine vinegar
• Juice of 1 lemon
• Salt and black pepper to taste
Directions:
1. In a large mixing bowl, combine the drained tuna, diced cucumber, chopped onion, diced tomatoes, and Kalamata olives.
2. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, and lemon juice.
3. Pour the dressing over the salad and gently mix.
4. Add the crumbled feta cheese and chopped parsley. Season with salt and black pepper to taste.
5. Toss gently until all ingredients are well combined.

Ingredients:
• 4 chicken breasts, boneless and skinless
• 2 carrots, peeled and sliced
• 1 onion, chopped
• 2 stalks celery, chopped
• 3 potatoes, peeled and cubed
• 2 cloves garlic, minced
• 1 cup chicken broth
• 1 teaspoon dried thyme
• 1 teaspoon dried rosemary
• Salt and pepper to taste
Directions:
1. Place the chicken breasts at the bottom of the crockpot.
2. Add the carrots, onion, celery, and potatoes on top of the chicken.
3. In a small bowl, mix the chicken broth, garlic, thyme, and rosemary. Pour this mixture over the chicken and vegetables in the crockpot.
4. Season with salt and pepper.
5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the chicken is cooked through and the vegetables are tender.

Ultimate Walking Taco Casserole
Ingredients:
• 1 pound ground beef
• 1 packet taco seasoning
• 1/2 cup water
• 1 can (15 oz) black beans, drained and rinsed
• 1 cup corn kernels (frozen or canned)
• 1 can (4 oz) green chilies
• 1 bag (9.75 oz) Fritos corn chips
• 2 cups shredded cheddar cheese
• 1/4 cup sliced green onions
• 1/4 cup chopped fresh cilantro
• Sour cream for serving
Directions:
1. Preheat your oven to 350°F (175°C).
2. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
3. Stir in taco seasoning and water and simmer for 5 minutes.
4. Add black beans, corn, and green chilies to the skillet and cook for another 5 minutes, stirring occasionally.

Ingredients:
• 400g spaghetti
• 200g pancetta, diced
• 4 large eggs
• 1 cup grated Parmesan cheese

1. Bring a large pot of salted water to a boil and cook the spaghetti according to the package instructions until al dente.

Directions:
1. Heat the vegetable oil in a large frying pan over medium heat until it reaches 350°F (175°C).
2. Separate the biscuits and use a small round cutter to remove the center of each biscuit, creating donut shapes.

Directions:
1. In a large bowl, mix together ground beef, bread crumbs, chopped onion, egg, Worcestershire sauce, garlic powder, salt, and pepper. Form into 4-6 patties.

• 250g ricotta cheese

Directions:
1. Bring a large pot of salted water to a boil. Add tagliatelle and cook according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent and fragrant, about 3-4 minutes.
3. Add the spinach to the skillet and cook until just wilted, about 2 minutes.
4. Reduce the heat to low and stir in the ricotta and heavy cream. Cook gently until the cheese has melted and the sauce is creamy. Season with salt and pepper.

• 1 bag (11 oz) Nacho Cheese flavored Doritos, crushed
• 1 can (10 oz) diced tomatoes and green chilies, undrained
• 1 can (10.75 oz) cream of chicken soup
• 1 cup sour cream
• 2 cups shredded cheddar cheese
• 1 small onion, diced
• 1 teaspoon chili powder
• Salt and pepper to taste
Directions:
1. Preheat oven to 350°F (175°C).
2. In a large bowl, mix the shredded chicken, diced tomatoes and green chilies, cream of chicken soup, sour cream, 1 cup of shredded cheese, onion, chili powder, salt, and pepper.
3. Layer half of the crushed Doritos at the bottom of a greased 9x13 inch baking dish.
4. Spread the chicken mixture over the Doritos layer.
5. Top with the remaining crushed Doritos and sprinkle the remaining 1 cup of shredded cheese over the top.
6. Bake for 20-25 minutes, or until the cheese is bubbly and melted.

Ingredients:
• 1 cup creamy peanut butter

Directions:

Frozen Yogurt Fruit Bars

Ingredients:
• 2 cups Greek yogurt
• 1/4 cup honey
• 1/2 cup mixed berries (strawberries, blueberries, raspberries)
• 1/2 cup mixed tropical fruits (mango, pineapple, kiwi), diced
• 8 wooden popsicle sticks
Directions:
1. Mix the Greek yogurt and honey in a bowl until well combined.
2. Gently fold in the mixed berries and tropical fruits.
3. Spoon the yogurt mixture into a popsicle mold.
4. Insert a wooden popsicle stick into each mold.
5. Freeze for at least 4 hours or until solid.
6. To serve, run the mold under warm water for a few seconds, then gently pull out each frozen yogurt fruit bar.

Fiesta Taco Twirl Pasta Salad

Ingredients:
• 8 oz rotini pasta
• 1 lb ground beef
• 1 package taco seasoning
• 1 cup cherry tomatoes, halved
• 1 bell pepper, diced
• 1 cup sweet corn
• 1 can black beans, drained and rinsed
• 1/2 cup red onion, finely chopped
• 1 cup Mexican blend cheese, shredded
• 1/2 cup ranch dressing
• 1/2 cup salsa
• 1/4 cup fresh cilantro, chopped
• Salt and pepper to taste
Directions:
1. Cook the pasta according to the package directions until al dente, drain, and set aside to cool.
2. In a skillet over medium heat, cook the ground beef with taco seasoning until browned and fully cooked. Drain any excess fat and set aside to cool.
3. In a large mixing bowl, combine the cooled pasta and ground beef, cherry tomatoes, bell pepper, corn, black beans, and red onion.
4. In a small bowl, whisk together ranch dressing and salsa. Pour this mixture over the pasta salad and toss to coat evenly.
5. Gently fold in the Mexican blend cheese and cilantro.

Chocolate Delight Cookies

Ingredients:
• 2 cups all-purpose flour
• 1/2 cup unsweetened cocoa powder
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 cup unsalted butter, softened
• 3/4 cup granulated sugar
• 3/4 cup packed brown sugar
• 1 teaspoon vanilla extract
• 2 large eggs
• 2 cups semisweet chocolate chips
• 1 cup chopped walnuts (optional)
Directions:
1. Preheat the oven to 375°F (190°C).
2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
3. In a large bowl, beat butter, granulated sugar, brown sugar, and vanilla extract until creamy.
4. Add eggs, one at a time, beating well after each addition.
5. Gradually beat in the flour mixture.
6. Stir in chocolate chips and nuts, if using.
7. Drop by rounded tablespoon onto ungreased baking sheets.
