If you have eosinophilic esophagitis (EoE) you know how confusing and scary it can be. In this video, I share an update on Luke’s EoE condition. It has been a long journey but we have been able to completely eliminate his symptoms and, according to even his gastroenterologist, Luke is cured and free from EoE!!! It honestly feels surreal. If you are on this journey too, know that you are not alone and you don’t have to do this by yourself.
Hydration Health Hack 💦 If you want CHANGE in your life you have to make CHANGES. I don’t recommend changing everything at once; rather, make SMALL changes that create BIG changes when they become habits. Drinking more water is essential for optimal health and can really help with weight loss, hydrating your skin, and increasing your energy. Try getting a water bottle with a straw to see if you naturally drink more. Also, make it a cute one that you want to take around with you. My water bottle is almost always in my hands and it makes ALL the difference.

My mom, as well as some of my closest friends, are 2s. One of my friends said this info was WAY too true! Lol, eating is complicated and so often impacted by our personality even MORE than what we know is “right” or “wrong.””

Dairy is a controversial topic 🙈
I’m not here to say that every single person has to abstain from dairy; however, I do think it’s important to warn people about the possible dangers and to encourage people to question conventional wisdom 🤔
My husband LOVED dairy: ice cream, yogurt, sour cream, cheese…everything. He now has an autoimmune condition that is directly linked to consuming dairy 🥛
If you are a parent, maybe think twice before you give milk to your kids and if you are an avid consumer of dairy listen to how your body feels after you consume it 🧀
Again, everybody is different and every BODY is different. Listen to your body and honour what it says 💕
And who said salads have to be boring? Om nom nom 🥗
This salad is a great example of BALANCE. ⚖️
I like to think of it as the CORE4 👌🏻
CORE4 = protein + fiber + fat + veggies 💥
PROTEIN: 4oz roasted chicken breast w/ Mediterranean spices
PROTEIN: sprinkle of goat cheese
VEGGIES & FIBER:
• A big handful of spring mix
• About half a handful of cabbage slaw
• 1 chopped chive
STARCHY VEG: 1/4 cup roasted beets
FAT: 2 Tbsp roasted beet dressing (has olive oil in it)

This meal is an example of a typical meal Ari and I like to eat. It’s loaded with healthy fats (salmon, olive oil roasted veggies, eggs in the fried rice), fiber (roasted veggies), and moderate protein (salmon). 🥗
I nourish Ari with good, tasty food and she helps remind me of HOW to eat. 🧠
She naturally eats when she’s hungry, eats what she wants to eat, and stops when she’s full. 👌🏻
