I can’t even take credit for this one because it was all !! After our workout I jumped in the shower and he went to TOWN in the kitchen 🙌🏻🍴
cauliflower gnocchi with prosciutto and spinach, served in a homemade sauce made of bone broth, garlic, scallions, salt + pep! Served with Parmesan cheese and toasted pine nuts 😋 Inspired by a recipe he found online!

Behold, the coveted pumpkin spice latte 🎃

I make mine myself rather than the starbs/DD version because that much sugar and whole milk at the beginning of the day would have me DOWN for the count with a bad stomachache (no matter how delish they may be 🤪)

My version: 1-2 shots + milk of choice, frothed (I used lactose free skim) + splash vanilla + pumpkin pie spice + honey (if desired) 🍂🍁

The boujee-est thing I’ve ever made deserves a boujee camera angle.
O !! M !! G !! This is so damn good - its rich and flavorful and buttery and feels like it should be an overpriced option at a restaurant.
It’s recipe for pesto wrapped chicken with puff pastry, roasted tomatoes and tossed green beans. the recipe is from his special series of dishes with only 5 ingredients (chicken, puff pastry, green beans, tomatoes and pesto!) I stayed late at work tonight and literally had this in the oven while I took out then when I came in it was DONE! So simple and seriously delicious. Will definitely make again!!

5-ingredient peanut chicken satay for our Sunday dinner 🤗 The crust was perfectly crispy and the lime added a really nice touch! Only 15 mins and five ingredients- chicken, chili flakes, lime, crunchy peanut butter and garlic.

Thank you to the team at for sending over a few boxes of their new shapes! As a firm believer that different shapes of pasta taste COMPLETELY different, I’m loving making experimenting with new recipes 🍝
I cooked according to package directions, while toasting panko breadcrumbs in a separate pan with Parmesan, oregano, garlic powder, onion powder, thyme and salt and pepper. Then, I wiped out the pan and sautéed chopped asparagus in olive oil, with garlic, onion, lemon juice, salt and pepper. Combine, top with toasted pine nuts and DEVOUR 🍴

I stirred pancake batter flavored vegan protein into my oats right before they finished cooking to add a little flavor (and protein) then topped with organic frozen mixed berries from ... partially because we only had frozen on hand but also because I LOVE when they get all melty with the hot oats. Who’s with me?? 🙋🏼‍♀️

Ok puns aside, how delish do these s’mores bliss balls look?! Recipe was totally inspired by recent post which have had me craving s’mores for DAYS! Adaptation of her recipe below - I made a big batch for the week🌞

S’mores bliss balls
2/3c
12 tbsp almond flour
6 tbsp coconut flour
6 tbsp nut milk
3 tsp maple syrup*
1/2 tsp vanilla extract
Handful of , cut into pieces
Pinch of pink salt

Combine, chill, roll into balls and dunk in dark chocolate of choice. Couldn’t be easier! I store mine in the freezer 😋

*these are NOT especially sweet, so if you plan to enjoy these as more of a dessert, you might want to add additional maple syrup or honey, liquid stevia, etc.

Zucchini season in the South means incredibly accessible cheap, local and organic squash...which is a slam dunk for me 👐🏻 I freeze zucchini to add texture to smoothies, but also love making stuffed zucchini boats like these, so we always stock up in the summer!

I’ve made these before a few different ways, but tonight was one of my favorites! But, to be fair, it featured the street corn (one of my all-time faves) which pretty much renders all the other combos obsolete. It just wasn’t a fair match up.

How to: Rinse and half zucchini, then hollow out with a spoon. Next, boil for 2-3 minutes to soften the zucchini slightly. Stuff with your favorites, making sure to incorporate some sort of sauce so the filling doesn’t dry out. I’ve had success with and these feature salsa! Then, top with cheese (if desired) and bake on 425 for about 30-35 mins or until cheese is bubbly and zucchini is tender. Allow to cool for a few mins, then add toppings and enjoy 🍴

Experimenting with cutting back on dairy over the next few weeks to see if it has any impact on my stomach/bloating. Updates to come! For now, chickpea pasta shells and dairy free queso- made from cashews 🤪

Bonjour!! Allow me to introduce you to what Paul has dubbed “the best thing I’ve ever made” (the title previously belonged to my homemade RX bars). Presenting: Chunky Monkey French Toast 🍞🍌🥜🍫

Place slices of bread of choice in a mixture of 3 eggs, 1/4 cup milk of choice, pinch of cinnamon and nutmeg, salt and vanilla. Make sure both sides are well coated with the mixture. Meanwhile, heat a skillet over medium-high heat with butter, ghee or avocado oil (your choice!) and then add the bread. While the first side is cooking, add VERY thinly sliced bananas to the uncooked side facing up. Use your spatula to press into the bananas a bit so they stick on to the egg mixture. Flip and cook through, admiring your perfectly caramelized bananas. I topped with a PB maple syrup (1/3 cup real maple syrup + pinch salt + vanilla + 1/4 cup natural peanut butter) and mini chocolate chips! But you can add whatever you’d like 👍🏻🍫💫

Sleeping in, homemade pancakes and good company... is there a better Sunday combo? This morning I decided to make these blueberry pancakes for brunch! They have plain Greek yogurt, no added sugar and whole wheat flour to make them a little more fuel-filled than your average stack. I adapted a recipe from to pull these together and topped with local honey (great for allergies!!), almond butter, chia seeds, unsweetened coconut, and cinnamon. Definitely recommend giving these a try! I omitted the honey from the original recipe, but if you’re looking for a sweeter base consider adding it back in or some liquid stevia!

3/4 cup whole wheat flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1 cup nonfat plain greek yogurt
1/2 mashed banana
1 teaspoon pure vanilla extract
2 large eggs
3 tablespoons almond milk
1 cup blueberries
(Mix wet and dry ingredients separately then combine. Cook pancakes in butter or coconut oil over medium heat and ENJOY! These are thick so be patient and wait for the telltale bubbles before attempting to flip.) @ Birmingham, Alabama

It has been TOO long my beloved Cauliflower Pizza Crust... too long. 🍕🍕
I’m all about mixing meals up, but when it comes to the Trader Joe’s Cauli Crust I always make it the exact same way. Why, you ask? Because it’s delicious. Perfect crispy, flavorful crust with broiled tomatoes, creamy fresh mozzarella and some spinach for a little color.
What I do: flip crust (according to package directions) and cook for 12 minutes on 450F. Flip and cook other side for 12 more minutes. Top with olive oil, basil, oregano, thyme, salt, pepper and fresh tomatoes. Bake for 5 minutes. Add spinach and mozzarella, then cook for 3-5 more minutes. Turn oven up to broil and broil for 3-5 more minutes, monitoring closely. Top with balsamic glaze if you feelin fancy and ENJOY! ✨

If you missed my Trader Joe’s haul on my story yesterday, here’s what you need to know: TJs is the GOAT and this bowl is all the proof you need. Everything in this bowl is from my trip there yesterday. It was affordable, it’s full of quality ingredients AND only took me 5 minutes to put together. Believe me yet? The TJs hype is real, people and this is a big ole bowl of some of my favorites. It’s their pre-grilled chicken, the broccoli kale salad kit and frozen brown rice 🥗🍗 Just goes to show healthy doesn’t have to be boring, expensive or time-consuming!

So SO happy with the way these PB&J balls turned out! 😋😋 They’re packed with protein and healthy fats and are naturally sweet! The best part? They only have 5 ingredients! Give them a try for a portable, healthy snack for work, school or the gym this week! .
PB&J BALLS: mash 1/4 cup of ripe raspberries in a bowl and set aside. In a blender or food processor, blitz 1/4 cup of old fashioned oats, a handful of unsalted peanuts and 2 tbsp. of h**p seeds. Do not make completely fine— leave a few chunks for texture! Add this to the raspberry mixture and add 1-2 tbsp of natural peanut butter, stirring until a dough-like consistency forms. Store in the fridge for at least an hour, then roll into balls!
